@twinengineer
@twinengineer 3 месяца назад
I'm not sure you know what a reverse sear is... You cook the steak in the oven, or on a lower temp in a pan. Then when cooked to your liking, you sear it in a HOT skillet creating a nice crispy crust. You do not deep fry it to get a sear. While deep frying adds it's own level of goodness, it's not the same.

Especially, if you dont have a great feel yet for your stove or grill. All but guaranteed to hit that perfect temp every time.

What are the best ways I’ve found to flavor your steak is to bast it with a couple of springs of rosemary Into the oil! Another thing to mention is when you have that much oil or butter in the pan it’s very important to have a good grip on your steak as you turn it over as I’ve gotten bad burns in the past when it splashes into a pool of molten butter

Beef tallow over ghee all day, or just simply start on the fat side of the piece, when the fat melts it creates natural oil in the pan, no need to add anything to a steak apart from pre salting it. People adding butter don’t know they are introducing inflammation through the glucose of the milk and the fermentation process that butter requires into the mix. At your own risk.

Thank you for the video. I just want to add in that if that is a Teflon pan that those emit toxic chemicals into the air and food. Stainless steel is a safer choice. Best.

Im finding I feel more nourished eating smaller more expensive grass fed cuts than big grain fed cuts. I guess the grass fed is what my body needs so I dont need as large amount as grain fed.

Dr Chaffee, could you tell me if it would be OK to use a cast iron pan on a daily basis, please? What pan do you use on a daily basis?

Hey Dr. Chaffee, quick questions for clarification. You don't have to trim anything off of the steaks before cooking? How long can you leave them in the fridge and then just pull out and cook? And lastly, how do you prepare ground beef? You don't keep it in the fridge as long as steaks, right? Thank you for the help!

Question, for everyone's benefit: How often do you use the same oil for frying before discarding the oil (bearing in mind that it's saturated and therefore doesn't oxidize)? Thanks Doc!
@anthonychaffeemd
@anthonychaffeemd 2 года назад
I leave it for several days usually, unless it starts to burn and discolor if the heat was too high. And you're right, it is very stable so you aren't going to run into the problems you will with plant oils

Thanks for answering that question, I was wondering that same thing. I love cooking my steaks in butter. Often I will pour what’s left over in the pan on my steak.... so good!

Ive been using my cast iron on the grill outside. I close the lid during preheat and during the seasoning process at the end. Works perfect and no mess.

Thanks Doc for the videos. I have 2 questions won't the meat get bad if I age it for a week. Because my butcher says that I have to consume the meat within 3 days. Even on the 3rd day in the fridge it begins to get dark and the sides begin to smell.Second question I don't lose weight in the carnivore diet,I've gained weight. What mistake am I doing? In the ketogenic diet I list 30 Kgs in 6 months

I have been doing steak like this for a long time but i do not do it often because i hate washing the kitchen every time. Pressure cooker is cleaner but not as good. Over a nice fire outside like the good old time is the best but i am in Canada so most of the year is not really cooking friendly out. Maybe air fryer is better, never gave it a shot.

take cold steak out of fridge at least 10-15 minutes before prep, pat steak dry, season with salt, heat cast iron pan, add butter, sear 3-5 minutes per side

Do you have a video on how you prepare your meats? How you saw them how long you keeping in the refrigerator after you saw them after you saw them Then do they stay good past the date on the package? Do you just put them in the refrigerator like they are your video or do you put them inside something I container or wrapped them?
