Today’s recipe is a quick take on the Goan Choris Mas (sausage meat). For Goan sausages, locally called Choris, pork is cured with salt for days and then mixed with spices before filling it into sausage casings; it is then smoked over time. Sausage Meat (Choris Mas) refers to the same stuffing without the casing. It usually takes days, but this recipe is easy and prepares it comparatively quickly.

Mog Asum ❤️ Let There Be Love
Ingredients:
1 kg Pork (boneless, with fat), cut into small pieces
1 teaspoon Salt
10 Kashmiri Chilies
6 Cloves
12 Black Peppercorns
/2 teaspoon Cumin Seeds
1/4 teaspoon Turmeric Powder
1” Cinnamon
1” Ginger
12 Garlic cloves
8-10 Tablespoons Goan Vinegar
3 Tablespoons Oil, for cooking
1 large Onion, sliced and halved
A little water (to rinse the mixer jar)
Salt to taste
3 to 4 teaspoons Tamarind juice
1/2 teaspoon Sugar

As usual,so methodical and easy to follow...going to make it soon... what's goan vinegar? Is it different from what we get here in the north? Any brand you could recommend?

Thanks Rimpi! Hope you’re doing well! Goan vinegar is much stronger than the usual white vinegar. It’s made from toddy (fermented toddy sap). Usually, in my cooking, I reserve it for pork dishes. My vinegar is locally made in Goa, so it has no brand. But you can use any that’s available. Even white vinegar, in slightly higher quantity can work.

Hi Lalita, thank you for your interest in my videos! Currently, I’m using a mixer grinder by Atomberg (but it has been giving me a few issues; recently the control knob broke☹️) If getting a fine paste is difficult, try dry grinding first and then add the liquid (in this case, vinegar) to get a finer paste. Hope this helps :)

Yes, very close, Reuben! Naturally, the smoked flavour is missing. You can wait for it to get drier for a more choris-like feel :)

I just checked on Amazon,there are several Goan vinegars,palm, coconut, sugarcane,toddy... which one? Though toddy vinegar is unavailable on Amazon
