Thanks! Yeah for sure, I would probably just increase the amount of vinegar in the recipe to keep it better preserved if you want to do water bath pickling for longer shelf life, good luck!
They are just unripe tomatoes, when the plants start to die or the season is ending you will have lots of small green tomatoes on them that will never turn red, so you can just pickle them and eat them, or you can even pick them before they ripen for pickling.
