Have you ever made pickles at home? You should -- it couldn't be easier. Today, I'm slicing cucumbers into chips (this is a great shape to use with sandwiches, but you can cut them however you like) and pickling them in a vinegar brine. These tangy vegetables will be ready to eat after a few hours and will last in your fridge for the rest of the summer. Make them today and enjoy!
Sarah's Tip of the Day:
When pickling, cucumbers with fewer seeds and thinner skins work best. Choose small Kirby cucumbers or larger European ones.

YIELD
Makes 3 1/2 cups
INGREDIENTS
3 cups white vinegar 1 1/2 cups sugar 2 teaspoons coarse salt 1/2 teaspoon mustard seed 1/2 teaspoon celery seed 2 to 4 small red chiles (optional) 1/8 teaspoon ground turmeric 1 1/2 cups fresh dill fronds (about 1 bunch) Prepared Vegetables
DIRECTIONS
STEP 1
In a medium saucepan, combine white vinegar, sugar, salt, mustard seed, celery seed, red chiles (optional), and ground turmeric. Bring to a boil, stirring to dissolve sugar. Arrange prepared vegetables and dill fronds in one or more jars. Pour hot brine into jar to completely cover vegetables and seal jar. Refrigerate until cool, about 2 hours (or up to 1 week).

I made this, but left out the dill because I like my pickles a little sour. I made with only 1/4 cup of sugar and added a few red pepper flakes, garlic, and black peppercorns. Incredible pickles and ready to eat the next day. The only problem I had is I drank all of the pickle juice before I could eat all of the pickles :-P

This technique is the truth! I ran out of regular white sugar so I used half white sugar and half brown sugar and the flavor was extraordinary. Will use half white and half brown from now on. Ate most of one jar the day after making them, so I'm not terribly concerned with the shelf life of these in the refrigerator.

you could actually twist the jars closed right after you filled them with hot brine and stand them on a kitchen cloth, lid side down, it will preserve them for 6-12 months. Just buy the twist jars with that little button on the lid. Leave them upside down to cool completely up to 24 hours and after that turn them right side up and you'll see that the "button" on your lid is concaved. you dont even need to refrigerate them, just store those in a dark and cool area of your house (i keep them in a pantry)

I made the cucumber pickles today. I used a commercial pickling spice mix, but apart from that followed the recipe instructions exactly. The brine was sufficient for two large English cucumbers. I first only added 1 cup of sugar but tasted it and it wasn't sweet enough for my liking so I added the other half cup. It was super easy to make these pickles.

Great tutorial. If you don't like sweet cucumbers then don't add the sugar or as much. Glad someone asked about using brown sugar as I was thinking of trying it. Not sure if I will like them or not but will try them. Don't be nasty she is just putting her recipe down for us if we wish to try it. Ok saying Cuces sounds different but we all have our little pet shortcuts. Thank you Sarah

When using dill for pickles the best flavour comes from using the flower heads instead of the stems & leaves. I use both because I still like seeing the dill sprigs. 👍🏻🖖🏻❤

Love Sarah's enthusiasm, even when the recipe is not for me. I'm adding my voice to the chorus of commenters who dislike sweet pickles. Marvelous that Sarah mentions it's possible to cut down on the amount of sugar. I'm sure the Internet has many unsugared brine recipes that work fine with the method she demos.

Don't care for sweet pickles myself. I use a giardinera approach and nothing is cooked. Like these, they are strictly sort term refrigerator pickles. But, the are amazingly fresh and crunchy. I'd love to try the brining technique though and will give these a try...sans sugar. Thanks for your great videos!

I've seen people use both the hot and cold brine to pour on the cucumbers. Can anyone tell me what the main difference is between the two? Is it just the texture of the cucumbers or is the taste different?

Cold brine will take longer to pickle the cucumbers. But they both work well.

Doesn't the addition of the hot liquid cook the pickles? Can the same be done with cooled liquid? The reason I ask is I like my pickles very crisp. Thanks.

Yeah the food channel said put the full bottle in a cold bath after the hot liquid.. It cools the liquid in the bottle.

Grandma makes the best pickles in the world, just shove the cucumbers into the jar with some mustard seeds, dill, onion, few slices of carrot, a table spoon of salt and a tea spoon of sugar, in the jar which is full of your stuff to be pickled put like an inch of vinegar, then complete with water, lids on, then boil the jars for like 20 minutes. Simple yet the best.

Everyday Food how long do I leave the pickles in the fridge for, I've been advised that it can take up to 4-6 wks before they are ready to eat(flavour wise)

Sterilize the jars and lids, put the lids on while everything is hot, and as long as the button vacuums, you don't have to worry about how long you keep them for until you break the seal. =p

What makes me RATIONALLY angry is that you and some others are so upset that this lady, who YOU have chosen to watch to get a recipe on her channel, dares to use a CHEF TERM for cucumbers....Then to top it off, those who are criticizing her can't even correctly spell CUKES!

to all the comments about the sugar... she is essentially making bread and butter pickles. Your kosher dill pickles cut out the sugar...cuts out the turmeric... adds salt to the brine and just sticks the pickles in the jar.. no real prep. Btw. 2 weeks in the fridge then will be good to eat
