Tarka dal recipe, serves 4
For the dal:
100g red lentils (masoor dal)
1⁄2 tsp turmeric
juice of 1⁄2 lemon
plain yogurt, to serve (optional)
shop-bought crispy fried onions, or see page 134 for home-made (optional)
small handful of chopped coriander leaves
For the tarka:
1 tbsp vegetable oil
2 tbsp butter
3⁄4 tsp cumin seeds
1 very small onion, chopped
4 fat garlic cloves, grated
2 smallish tomatoes, chopped
2 tsp ground coriander
1⁄4--1⁄2 tsp chilli powder
Salt
Method:
Bring the lentils to a boil in a saucepan. Once the scum rises to the top, skim it off and add the turmeric. Leave to simmer while you make the tarka. For the tarka, heat the oil and butter in a frying pan and add the cumin seeds. Once they darken, add the onion and cook until soft and colouring on the edges.
Add the garlic and cook gently for one minute, then add the tomatoes, spices and some salt and cook until the tomatoes soften and the whole thing reduces into a paste and releases oil back into the pan, around 15 minutes.
Add the masala to the lentils, making sure you get all of it out of the pan. Cook the lentils for another six to eight minutes or so, or until the whole thing comes together and looks homogenous. It should neither be too thick nor too watery.
Taste and adjust the seasoning, adding a good squeeze of lemon juice. Serve in warmed bowls, topped with a swirl of yogurt and some crispy onions, if you like, and the coriander.

Last time I ordered this from my local Indian restruant it was nothing like this!. It was watery with no flavour with a few chopped onions floating on top with a few micrograms of spice thrown in!!. I will be using this recipe from now on. Thank you for showing me a proper recipe. :)

I love this recipe. It's so tasty and comforting to eat. My only comment is: the ingredients that are shown at the beginning are not all used in the video. I don't use the extra coriander powder, or ginger that's mentioned. Even if you just do the cumin seeds, garam masala, onions, garlic and tomatoes and then throw a big handful of chopped coriander in at the end and cook it in then it still works fine. LOVE IT!!!!

Well I just made this for my lunch and very tasty it was too. I didn't use the 100g lentils as stated in the recipe but used about the same amount in the video (way over 100g) I'm guessing getting the lentils right is key here, over cooking could be a mess, too much water = too watery and bland, too little water = harder lentils or stodgy shite, am i right? I read somewhere to use 3 times the amount of water to dried lentils which i roughly did, turned out ok but did have to tip out some water before adding the tarker to 'thicken ' it a bit more.

I've read that you should only add salt or vinegar to lentils after cooking as it can have a negative effect on the lentils, is this true? Please explain in scientific detail how the chemical happenings of salt or anything acidic react with the cooking lentils.

Please don't mind when I say this isn't the Quickest dal ever ;p hahaha. Cuz some of us useless bachelors are surviving on a bowl of cornflakes and eggs and desi sweets and fruits and namkeen and meusli sommmmehow during this Corona Lockdown. So i'm looking for the fastest recipe my pampered little male brain can handle. A colleague and i were having a serious discussion yesterday at the office (they opened up some offices in bangalore with under 30% staff and high corona safety) and he mentioned that a dal can be made in (i mean all the action needed from me) in about 3 to 5 minutes. Taste is not the highest priority right now, survival is ;-) hahaha. i forgot the process though. i'll ask him again. Thank you for your beautiful dal lesson, this dal looks amazingly delicious especially with that butter and lime.

Usually Arhar Dal Or Toor dal is used. It's also called broken Pigeon peas dal.

how long did you cook the lentils for ? i had mine boiling for at least 1/2 an hour now and they are still crunchy ... and i already soaked them overnight ?? thanks ... its my 1st time cooking Dal :)

if you dont have a pressure cooker, daal takes a long time to cook on the stove. Atleast a 1.5 to 2 hours, keep adding water if it all evapourates.

Red lentils take a short time to cook. Other may need longer or soaking overnight. Also - always wash your lentils!!!!!

The normal water ratio for lentils and other pulses is 3:1. For dal tarkha I use a ratio of 2:1 in a pressure cooker, I prefer it more viscous.

Just eyeball it... It's not difficult :) If it looks too thick, slowly add more water until it looks right!! Magic!

It bothers me that she doesn’t say how much water. I don’t care what anybody says you add too much it’s liquid you had two little it’s Raw lentils. No eyeballing measurements please.

hhahahaha! I feel you! ...my mom takes a handful of salt and sprinkles it on the dish and grabs some other spices and throws them on as well... just add a little bit of this, and that, she goes; and i'm like, whaaaa!!! ...So i actually measured it all out and wrote it down in a notebook. Comes out the same every single time and even my aunty from Andhra Pradesh who is a master chef LOVES my recipe and i never will show it to her ;-)
