indian dessert made with cheese dumpling in cream syrup
Ras Malai is dumplings made from cottage cheese soaked in sweetened, thickened milk delicately flavored with cardamom and garnished with nuts

Ingredients
1000 ml milk for making ?rabri?
5-6 number blanched almonds, thinly cut into slivers
1 tsp green cardamom seed powder or a little rose essence
1000 ml soft Paneer made from milk
1 cup sugar
4 tbsp sugar for rabadi
6 cup water
Directions
• Make paneer as instructed, hang in muslin for 1 hour, but do not press it.
Boil water and 1 cup of sugar and 6 cups of water in a deep vessel until it boils vigorusly
• Knead paneer until very smoothwith in the cloth . Make into walnut sized balls, flattening them a little, like a 'peda' or a small burger.
• add to boiling warter/sugar water.and boil at high flame and the rasgullas will be ready in 10 min
• remove and let it sit in some of same syrup till it cools down sqeeze out the water and soak in rabadi.
• serve garnished with flakes of almonds.

Hi Sanjay, Thank you very for ur service to the indian food lovers.. and a heartly respect from a immature cook like me ...who gets veryvaluable input from ur videos to make food more delicious. i tried this ras malai recipe yesterday ..everything was good even after taking our the pieces from sugar syrup they were sponjee..but once i put them in the rabadi and after a night in the fridge the pieces turn out to be hard like cheese... why why why ??? please reply me i am waiting for your answer

Since coming to USA I've tried making rasgullas following recipes posted by various cooks, but failed miserably. However , today I tried your recipe and followed it word by word .And lo !! Behold the beautiful rasgullas . Making soft , fluffy rasgullas is one of the toughest jobs I've encountered. Making the rasmalai was a matter of minutes . Thanks for giving the time and effort to teach these recipes so religiously. You are truly a GREAT CHEF !!

Hi vahchef, awesome idea to knead the dough without taking it out of the cheese cloth, no mess. It was the first time my rasgullas came out wonderfully. But I used showmethecurry idea to cook them as I prefer not to keep worrying about the rasgullas and I have a pressure cooker :) ! I think I'll probably add more sugar to the water though to make it sweeter.

Hi, I am a Sri Lankan who lives in U.S.A. I love having Indian food.Thank you so much for taking the time to share your knowledge.You gain lot of pin [good deeds for next life ] Some times I do not understand the Indian names used for ingredients. when ever possible tell the English name,or show labels of products, so that its easier for people like us to buy the ingredients from supermarkets when there isn't a Indian store near by.

hey i just have a couple of questions about this recipe. firstly, when you boil the milk to make the rabadi, doesn't the milk just evaporate? secondly, could you specify on quantities a little? that way we'll know how much of ingredients to use for how many people. apart from that, i really love your show. you're so enthusiastic and dynamic...keep up the good work!

dinchik dinchik: mortar and pestle rabri: homemade thick milk that you just put on the stove to evaporate out all the water so that it becomes condensed. To this, add sugar, spices, whatever Hope that helped! :)

You are genius. you know after watching your video I made perfect resmalai in very first attempt and all credit goes to you. I did nothing but just followed your instruction. it's just amazing...... I want to know, what if I want to make Rasgulla (chhena)? What precautions do I need to take while preparing chhena. Will it be little hard then or what? Please tell me how to do that.....? Though there are many videos on youtube, i want to hear from you. I have become your bigggggggg fan......

Hi waahchef, Thanks a lot for this video. Today, I tried your rasmalai racipe and it came really good. I used lemon juice to curdle the milk but rasmalai had little bit of lemon flavour. So, I think we can use something else like citric acid to curdle the milk. -Sumeet :-)

Nice recipe. One more tip...... this can be made using fat free half and half. Protien is softer than fat, therefore the paneer remains very very soft.

I always wanted to know how to cuddle milk to make Rasgolla. I don't know what they add to Rasgolla in market these days that it becomes so elastic and chewy. Can't wait to make this.

Hello VahChef! I regularly visit your website and even I like to watch same video so many times. All your videos are fantastic and the way you explain, is too good. I tried Rasogulla. It was very soft initially . I left Rasogulla in the same sugar syrup for 6-7 hrs. It became hard ,same as those we get in Tin in the market. Wd u pls suggest the way to keep it fluffy.

my adventures with rasamalai have never been a success so far. i have never got the cheese right, and they always used to break in sugar syrup...this video looks damn inviting..and makes me want to try it once again!

Thank you :) and not soft :( - Thank you :) - I made this for my wife and children as a surprise and they were surprised and happy! I have never cooked for 40 years of my life, and now I am able to make all these nice things, thanks to you. I especially like how you show us exactly what we as new cooks need to know - what things look like, common pitfalls and how to avoid them. I would have never got the confidence to try if not for your fun filled practical videos. Just 1 question on making rasmalai - I tried, but my dumplings have not come soft - they feel more like a soft peda. What coudl have gone wrong? And how do I make them soft like the ones sold in shops? Mine did not look like what you have shown in 4:30 - my paneer looked and felt all crumbly. It was not so easy to make them into balls (but they stayed intact in the bubbling water and when I served them)

hi chef!! Tried this yesterday with pure cow milk. My comments - Water:Sugar ratio while boiling the rasagullas i feel is not sweet. After the rasgullas are cooked, it didnot absorb the sweetness. So after I soaked the rasgullas in Rabri, the sweetness was less in rasgullas but rabri milk was very sweet. Texture of rasgulla was very soft, i followed your method added ice and all. So let me know how I can make my rasagullas more sweet. :)
