The origin of Red Velvet Cake like it's recipe has many versions. According to historians, the Red Velvet Cake recipe was born in the 1800s. Later on, Waldorf-Astoria Hotel claimed that they invented the cake. The Adams Extract Company also attributed itself as the makers of the "original" red velvet cake. There were also stories that Red Velvet Cake was invented during the time when there was a shortage of cocoa powder so bakers started to get resourceful and added red food color to the small amounts of cocoa powder they had.
The red velvet cake actually started out as a mahogany-colored cake with the addition of brown sugar and the chemical reaction of the leavening agent to cocoa which made the cake reddish brown in color. It was in the 1900s with the Adams Extract Company's initiative that the red velvet got it's reddish color with the addition of red food color/extract.
The real red velvet should not be bright red. It should be a bit brownish because of cocoa powder and red food color. The more cocoa powder you add to the recipe, the more mahogany the color of the cake. Adding too much red color to the cake mixture will make the cake bitter. So, you should be able to strike a good balance of cocoa powder and red food color. I hope you will enjoy my version of the Red Velvet Cake. It is simple and straighforward.

Put 1/4 cup buttermilk powder in a 1-cup measuring cup. Add enough water to reach the 1 cup level. This is equivalent to 1 cup buttermilk.

Yes you can. Reduce the all purpose flour by 2 tbsp. per cup of cake flour because all purpose flour is heavier than cake flour.

Glad to know your cake turned out well. Dairy whipping cream does not whip as well and as firm as non-dairy. If you use dairy whipping cream, try to chill after mixing before you apply it on the cake. Hope this works!

No ma'am. I do not oil the sides of the pan. I just line the bottom of the pan with parchment paper.

You can but you need to reduce 2 tbsp. per cup because all purpose flour is heavier than cake flour.

I used vinegar twice for this recipe because the first one is to make sour milk. If you can buy buttermilk in your area, then you do not need to make sour milk. Buttermilk is a crucial ingredient in Red Velvet because it is responsible for it's slightly tangy and distinct red velvet flavor. The second vinegar is added to the baking soda. You add this last because by mixing them together, you are creating or generating "extra" rising powder and adding it last will help you retain these "extra" rise when baking. Dear Chef, if I have a cake recipe that uses all butter, can I sub half of the butter with oil on 1:1 ratio? What is the correct ratio? How about if I sub the butter with all oil? Is it still correct to do the 1:1 substitute? Salamat po.

Yes, you can but it also depends on the kind of cake you are making. Oil does not cream well so it does not incorporate air into the cake mixture. If your cake requires air to be incorporated, then you cannot use oil.
