Shrub - From the Arabic word sharāb meaning "to drink". It was originally developed from the process of using vinegar to preserve fruit (pour vinegar over fruit and steep, press out and add a sweetener, then reduce it down to a syrup)
Shrubs are made using:
- Fruit 🍓🍉🍐🍊
- Sweetener: molasses is traditional, honey & maple syrup are also delicious
- Vinegar - sometimes alcohol is added, such as rum, brandy or beer
Version 1
Cover fruit what sweetener, usually equal parts fruit to sweetener
Let sit for a week in the fridge
Strain and add vinegar; equal to the volume of the pressed fruit/sweetener juice, or to taste
Let rest in the fridge for at least a week to blend and mellow flavors
Can last up to 6 months in the refrigerator
Version 2
Combine 1:1 ratio (equal parts) fruit to vinegar
Macerate several days to a week
Strain & add sweetener
Heat on low to dissolve sweetener
Place in sterilized jars
Let it rest for at least a week so the flavors blend
