To trigger the Nicholai's cutscene: you need to choose "Jump out of the window" on the live selection screen on the newspaper building or choose "run into the basement" on the restaurant (MUST EXIT by the ventilation hole). Later in the game you will find Nicholai at Gas Station.
Now to trigger the Carlos's cutscene: you need to choose "Hide inside the kitchen" on the live selection screen when Nemesis appears on the Restaurant, or meet Carlos inside the Newspaper Office and choose "Hide in the back" when Nemesis appears in there.
