Oh my, this is delicious. I made it for dinner tonight and I roasted my own peppers. My huband and I ate it all, practically licking the pot! 🤩🥰The only change I made was penne instead of rigatoni because that's what I had on hand. It is simple and elegant, not to mention nutritious and healthy. I will make this for my vegetarian friends.

I tried this last night. I couldn't get the pasta water to thicken (maybe I wasn't patient enough!), so I threw in some cornstarch. When it was finished, it looked like yours. For the paprika, I used smoked paprika...I thought the little bit of smoke flavor would be good...maybe replicating charring my own peppers--who knows. I am a wimp, however, when it comes to spices, and this was a little too spicy for me. I am thinking to substitute the paprika with liquid smoke. See what that does. Regardless, it was very tasty. Love this whole recipe. Do you have an alternative for the milk. I do not drink milk or any milk type alternative. Would chicken broth work? This looks super delicious❗

@@sunflowerbaby1853try coconut milk, the stuff in the can. I think it would be delicious. I've used canned coconut milk before in a chic pea curry dish and it was fabulous. I'm going to try it too, it's going to be good I just know it.
Let's say we found that 1/2 cup pasta water is what we need. Would mixing it in the sauce (food processor) have the same results as adding it later? Lawrence
