To Die for delicious alternative to spaghetti saving over 30 grams of carbs per cup - loaded with fiber, Vit C, Manganese, B Vitamins, Potassium, and skin and eye protective antioxidants - Roasted Spaghetti Squash shown here we are cutting into Discs or you can do as a BOAT and fill with sauce and Meat Balls (the Bison Ball recipe in my book is a favorite) or make your own lentil or bean plant-based ball with a red sauce. Filling and loads of dense nutrients your body loves!!!
Ingredients:
Virgin Unrefined Coconut Oil
sea Salt
Pepper
1 - 2 small to medium size Organic Spaghetti Squashes
1 small yellow or sweet onion, sliced thin
4-8 garlic cloves, rough chopped
Fresh Parsley
preheat oven to 400 degrees - baking sheet lined with parchment paper
slice the squash into discs approximately 1 inch thick
brush with coconut oil, Season with sea salt and pepper
cover with some parchment paper then foil to make a steam
cook for 30 minutes - fork test remove topping and cook for another 10 to 15 minutes.
sauté the onions in 1 Tablespoon of coconut oil about 3-4 minutes until lightly translucent and fragrant add the garlic and let cook for another 3 minutes
when the squash is fork tender - remove let the discs cool a little or use a pot holder glove to hold while you remove the strands of spaghetti from the rind .
add the squash to the sauté pan toss and add some chopped parsley!!
