This delicious Late Summer into Fall-inspired easy recipe will have everyone, even the Kiddos, loving every bite. Acorn Squash is another nutrient-dense harvest vegetable with important B vitamins, powerful free-radical-busting antioxidant beta carotene, and approximately 20^ of the daily allowance of vitamin C. This rich dish boosts the immune system and nourishes the blood.
1-2 Acorn Squashes, seed removed and quartered
1/4 cup water
1-2 Tablespoons Pure Maple Syrup
2 Tables Finely Grated Ginger Root
pinch sea salt 3 Tablespoons Grass-fed organic butter or Ghee
Preheated oven to 400 degrees - cut squash in half and scoop out the seeds then cut it into smaller slices
Place squash in a greased baking dish - 9 x 13 filled with the water
bake for 20 minutes uncovered
combine the butter or ghee, ginger root, and maple syrup brush over the squash slices, and cook for another 20 - 30 minutes until fork tender.
