Roasted Squash Soup

400ml coconut milk
400-500ml stock of choice
2 white onions
5 garlic cloves
2 inch thumb ginger
2 stalks celery
2 apples
3 carrots
1 leek
1 tbsp. cumin seeds
1 tsp. dried thyme
1 tbsp. dried oregano
1.5 tsp. dried parsley
fresh thyme
sea salt/ black pepper
coconut oil
