Cakeshare, my salted caramel and chocolate tart recipe! ASMR

SALTED CARAMEL:
200g fresh cream
75g butter
150g sugar
2/3g salt
TART:
80g butter
40g sugar
1g salt
30g whole egg
130g “00” flour
PISTACHIO CREAM:
50g butter (room temperature)
50g sugar
50g whole egg
40g pistachio flour
10g “00” flour
PEANUT GANACHE:
50g fresh cream
50g milk chocolate
25g peanut paste
DOSES FOR: 6/8 PEOPLE
CAKE DIAMETER: 16 cm
Little note on salted caramel!!
You have to melt the sugar over a fairly low heat and mix the sugar with just the movement of the pan, only towards the end you can use a wooden spoon. The color of the caramel shouldn't be too dark, so be very careful and as soon as you see that the color is nice amber, pour the hot cream directly inside. When you pour the cream you have to be careful not to burn yourself, having water inside the cream will tend to evaporate quickly and could even splash. Turn vigorously for about 3/4 minutes until cooked through, I recommend using a pan with high sides.
Once cooked, add the butter and salt.
