Ingredients:
Mother sauce
1 yellow pear
1 medium onion
40g peeled garlic
2 stalks leek
180ml light soy sauce
1/4 cup honey
1 tsp black pepper

200g sliced Hokkaido Snow White pork belly
A handful of garatteok
Make the mother sauce first by blending 1 yellow pear, 1 medium onion, 40g peeled garlic, 2 stalks leek, 180ml light soy sauce, 1/4 honey and 1 tsp black pepper into a saucy paste. Store in a glass jar and refrigerate for 1 day.
We are using Hokkaido Snow White pork belly slices from Don Don Donki, about 200g one pack. Marinate the pork belly with 2 to 3 tbsp mother sauce, 1 tbsp light soya sauce and 1 tbsp corn flour. Mix well and refrigerate for 1 hour.
Heat up a cast iron or regular pan with some oil until it is very hot. Grill the marinated pork belly slices on each side for a few minutes until they are crisp and golden brown around the edges. Strain the grilled pork of any excess oil.
Add the remaining pork belly marinade into a new pan. If there is insufficient marinade, simply add 1 tbsp of mother sauce instead. Grill a handful of chopped garatteok until they are soft and chewy and lightly browned around the edges.
To serve, plate the pork belly slices in a fan like shape and garnish with the garatteok and some fresh kimchi or geotjeori and it is done.
The Hokkaido Snow White pork is also known as Yume no Daichi pork and is extremely smooth and silky in texture when compared to regular pork. It also has a lower fat melting point and as such, a delicious creamy taste that’s never overwhelming.
It is also known to have more oleic acid which helps to reduce bad cholesterol and maintain good cholesterol. Hence the pork is not only more tasty, it is also healthier.
The pork belly is thus very succulent and juicy when grilled and especially delicious when marinated with a Korean mother sauce of pears, onions, leeks, garlic, soya sauce and black pepper.
