Tried a new oven and still successful 💪 fluffy but chewy because of apples and pumpkin seeds.
Ingredients:
8 oz. Butter
100g flour1 teaspoon cinnamon 1 teaspoon baking powderless than 1 teaspoon baking soda70g sugara pinch of saltsmall amount lemon juice2 eggshalf appledried raisinspumpkin seeds
Step 1
Prepare butter in room temperature. Preheat oven to 160 degree.
Step 2
Dice apple with skin, add small amount lemon juice and mix.
Step 3
Add small amount lemon juice to egg white and whisk until peak stands erect.
Step 4
Whisk butter until doubled in volume, whisk in sugar gradually, add egg yolks and whisk. Fold in flour, cinnamon, baking powder, baking soda, sugar and salt.
Step 5
Add apples, dried raisins, pumpkin seeds, add egg white gradually.
Step 6
Pour batter into cake pan, sprinkle sugar on top, bake for 20 minutes, turn cake pan around, bake in 170 degree for another 20 minutes.
