This is also known as Chinese pancakes. They taste so good with Congee (or rice porridge). It’s my favorite thing to have for breakfast.

I’ve seen my mom do it a thousand times, you can make this with leftover dough too. Just remember, always more scallions. When you think you have enough, add more.

We have a similar dish in India called Paratha it is made in a very similar manner and I just love how you fold it, gonna try it myself sometime
