In this video I will show you how to make Scandinavian sourdough wheat bread with roasted and ground wheat grains. The bread is suitable as an accompaniment to a variety of dishes, or on its own with a glass of red wine.
SOURDOUGH WHEAT BREAD WITH ROASTED AND GROUND WHEAT BERRIES
For 1 loaf
SOAKER
25 g whole wheat grains
100 g boiling water
Roast the wheat grains in the oven at 180C until golden and then grind them.
DOUGH
100 g active wheat sourdough starter of 100% moisture content
400 g water 32-36C
400 g wheat flour (at least 12% protein)
100 g whole wheat flour
14 g salt
