In this video I quickly walk you through how I trim a brisket prior to smoking for a customer cook. This is how I do my briskets and by no means the only way to get it done. I am not cooking for competition or using the trimming s for sausage. That being said I am looking to get the highest yield possible so I don't trim the muscle as aggressively as some others may.
