Your recipe and video made paella appear to be much less technical / difficult than any other paella preparations I have ever seen. Wow! Very nicely done. I appreciate your time and work on it.

In 1989, I went to Little Portugal in New Jersey as a new Flight Attendant that had never stepped foot out of southern Indiana. The crew sat down for a family style paella with fresh Portuguese bread and the best butter I've ever tasted. I've spent all of these years trying to recapture that exquisite taste and still haven't come close. That dish was life changing and soul stealing!!!
Happened to me and my brother when we went to Roma, Italy, when our excursion had a lunch break. We went to this lovely little trattoria whose interior decoration was like we were invited to someone's backyard. It was festive, welcoming, and fun. On our table (and they were long tables so it sat about 20 people or so) was all the prep and wines and olive oils. Now, backtrack a little bit, my brother and I were from Iowa and we had this experience at an Italian restaurant where for appetizer, there was a bowl of warm and cozy Italian bread with butter and olive oil. The waiter suggested that we let him show us how to eat Italian bread. He took the olive oil and put it in a small platter (about 6 inches across) and then put freshly grated parmesan-reggiano cheese in it. Then he gave it a light dusting of freshly cracked black pepper in the same platter. He then showed us how to dip the bread into the olive oil and eat it. It was a revelation. I will never eat table bread the same way again. Fast forward to Roma. My brother and I sat together with other people from our cruise and saw them doing the bread and butter thing like everyone else. He and I asked the waiter to bring us parmesan-reggiano cheese....except, shockingly, he didn't have any. They didn't even have balsamic vinegar neither! So a bit disappointed, we took the table olive oil and poured it over on the platter like we knew from Iowa. Since they didn't have cheese nor vinegar, we sprinkled a very light amount of red pepper flakes into the olive oil. We took pieces of bread and dipped it into the olive oil. If there is ever such a thing as food as God intended, this was it. That olive oil was spectacular. It was a first pressed, exclusive oil for that restaurant. The aroma was earthy. The umami, my Sweet Lord, the umami. It had that earth-shattering, life-altering, nothing-will-ever-be-the-same flavor that was so unexpected and so delicious that we looked at each other and said, "No....way." While we were moved to tears at how ethereally delicious was that olive oil, we felt something. We looked up and saw other people at our table watching us eat bread and olive oil. Some of them were Europeans and even they had never seen that before. So they tried eating bread as we did and I gotta tell ya, the butter was neglected the rest of the meal. It was one of our most favorite moments in Europe.
Excellent recipe I was looking for Bobby’s Flay one which I made a long time ago and was the best and couldn’t find it so watched many and this is just like his !! 5 stars ⭐️!!!!
