[Gluten-free rice flour tea chiffon cake]
This is a rice flour tea chiffon cake made with Earl Grey, which goes perfectly with the scent of seasonal peaches.
This light chiffon cake is made without dairy products or soy milk and is fluffy and baked with the moisture of tea, so you can enjoy the aroma.

🍑Rice flour tea chiffon cake with the scent of peaches and Earl Grey - Ingredients
○17cm chiffon mold for one piece
(A tall chiffon mold is used in the video)

・Rice flour (for baking) 85g
・Egg white 150g (4 large eggs)
・Egg yolk 75g (4 large eggs)
・Light sesame oil 40g (or mild vegetable oil)
・Beet sugar 80g (30g for egg yolks, 50g for egg whites)
・Earl Grey tea leaves 6g
・Boiling water 40g
・Pinch of salt
・Lemon juice 6 drops
For topping
・Fresh cream 200g
・Beet sugar 2 tablespoons
・Peaches 1-2
・Mint as needed
Preheat oven to 180℃. Cook in oven at 170℃ for 35 minutes + 150℃. 5 minutes
