Seitan is a meat substitute made from wheat gluten that has been used in East Asian cuisine for centuries. It originated in ancient China, likely in the 6th century, as a way for Buddhist monks who followed a vegetarian diet to find a plant-based protein. The Chinese called it mian jin, which translates to "wheat meat". In this video we will be making seitan and turning it into a vegetarian pepperoni. We will also show you how to use the starch water, which is normally discarded, to make a vegetarian bacon.
The dough to make the seitan:
• 6 cups flour
• 2 cups water
The seasonings for the pepperoni:
• 2 tsp. salt
• 2 tsp. black pepper
• 2 tsp. crushed red pepper
• 2 tsp. smoked paprika
• 2 tsp. ground mustard
• 2 tsp. garlic powder
• 2 tsp. onion powder
• 2 tsp. oregano
• 2 tsp. sugar
• 2 tsp. fennel
• 2 Tbsp. tomato powder
• 2 Tbsp. beet powder
• 1 tsp. liquid smoke
• 1 Tbsp. soy sauce
• 2 Tbsp. solid coconut oil
The seasonings for the bacon (2 cups of starch batter total):
RED PART (1 cup of starch batter):
• 2 Tbsp. soy sauce
• 1 Tbsp. maple syrup
• 2 tsp. beet powder
• 2 tsp. smoked paprika
• 1 tsp. salt
• 1 tsp. liquid smoke
• ½ tsp. garlic powder
• ½ tsp. onion powder
WHITE PART (1 cup of starch batter):
• 2 tsp. salt
• 1 tsp. liquid smoke
• ½ tsp. garlic powder
• ½ tsp. onion powder
• ½ tsp. black pepper
