I don't like chewy cookies, I prefer it crunchy, but not toasted. I was able to make crunchy cookies using margarine by adjusting the temperature and oven time. A 30g margarine cookie bake at 180 celcius 15minutes is chewy. I tried baking it for 30min, it turns crunchy, not stone hard though. What's the gram of your cookie?

I prefer to flatten my cookies rather than leave them in a ball before placing in the oven. I get a flatter, crisper cookies. My spouse cannot eat butter so I am forced to use margarine, in my case dietician suggested I can’t Believe it’s Not Butter.
