Thankfully, the Shredded Carrot Sandwich from 1941’s 500 Tasty Sandwiches has a bit more going on than just shredded carrots. When I first read the recipe I thought it was an odd combo of ingredients for 1941. Turns out, not so much. And just a reminder, I tend to not add meat to sandwiches that don’t have any as it re-focuses the sandwich. That said, this would fantastic with some grilled chicken. Just sayin’.

I look forward to the episode where Barry walks on, introduces the sandwich, forgets to record mixing the ingredients, forgets to record putting it on the bread, forgets to record eating the sandwich, so the whole video is just an intro and then "yeah it was good".

That coleslaw sandwich reminds me of a sandwich I've been making lately. what I call 'egg roll' sandwich. It uses what would be the filling of an egg roll(coleslaw mix, ground meat, 5 spice, sesame oil salt/pepper cooked together), bound with some plum or duck sauce, then put into a sturdy bun, often with part of its innards removed.

It is almost like a coleslaw. I would plus it up with grilled chicken or smoked turkey and a bit of onion.

This is a long distance away from bahn mi, but there's non-zero overlap. Cabbage vs Daikon, figuring out the mayo percentage, maybe adding cilantro and jalapenos, something similar to this could be a great base for another sandwich, whether vegetarian or adding cold cuts or other meats.

Coincidentally, I was thinking today about trying a cucumber slaw. Now you got me thinking... I think half as much carrot and red cabbage, shredded and salted with the cuke, then run through the salad spinner to dry out. For the dressing, some tahini, sriracha, and a touch of mayo {maybe a splash of vinegar, I'll have to taste it}, plus salt, white pepper, and onion power. I got a cookout on the 3rd to get ready for

I know that you don't like to plus up meat to a veggie sandwich. May I suggest marinated tofu? You can buy it pre marinated at the supermarket, and it would add protein and some substance. You can slice it or mash it up.
