Very well presented Desmond.....I am English, and my husband is from |Sierra Leone. I'm planning to surprise him after following your recipe, if i can get the frozen cassava leaves . By the way my husband can also cook Sierra leoneon food very well himself so he will be surprised that i have made it for him .Thanks...I've only ever had it with fish, but i will definately try it with meat as I think I will prefer it.
He said he will be using the Sierra Leone style and indeed we use peanut butter when cooking cassava leaf, am a Sierra Leonean but i don't cook it this way. The peanut butter, palm oil, fish and meat first before the cassava leaf, any way it's your style of cooking.

Every Sierra Leonian knows you cook cassava leaf with ground nut, if you use okra, you are probable use to Guinians cooking it, or from another country. The video specifically says Sierra Leone recipe. even though his doesnt look like the one i grew up with, i agree with the ground nut :)
He tried. The traditional way to cook cassava leaf is to blend the ogiri (fermented sesame seeds), with scotch bonnet pepper and onions. Also some tribes/people cook cassava leaf with ground nut paste whilst others add pureed raw okra to make the sauce creamy. The trick is to simmer very slowly until it changes color and the oil floats to the top... Looks like he tried to adapt with the ingredients he could find.
I'm Liberian and we cook our cassava leaves WAY different......... But it doesn't matter, just because others do things differently, doesn't mean it's wrong......I would honestly like to try your version....
well done. I use exactly this method as my mum taught me only objection is you need to blend the onion and pepper (my mum never cooked ogeri but trust it was the best cassava leaves I've ever eaten in my life). By cooking the cassava leaves first, you break the smell and it allows the cassava leaves to cook well and that you can notice by the change of colour...but depending where you come from in SL, there are so many other ways to cooking it. I give you credit for posting this video and making Cassava leaf...it's very difficult to make it to me. I have tried and everytime I fail because it's so bitter maybe I need to cook it longer but then it starts to burn on the bottome of the pot LOL! I'm not from Sierra Leone I'm African American with Sierra Leone Hubby!
GREAT job can you PLEASE tell me what type of palm oil you use for the cassava? is it red palm oil, kernnal palm oil,? the kind from the fruit or the kind from the kernal?
So, i had cassava leaves and I fell in love with it. We don't have this in Nigeria. I did everything as was said in the video (except groundnut). I cooked the cassava leaves for 2 hours and it was still slightly hard. What is a good rule of thumb. Should the leaves be cooked on high or medium heat?
@bimbtful Thanx and yea it takes me and my grandma very long to make and we do a few more steps, but we ran out of palm oil and are in the US don't want to go to africa to get palm oil :/ i hope the king i have is right it says organic palm oil im cooking cassava now to make sure its the right kind for xmas

thats the thing about africans, we dont know how to keep track of measurements. is it wrong to say tablespoon or 1 cup? i am sierra leonean, but american born and i want to learn how to make casava leaf. quantity of ingredients? or measure by taste??
kendra kolku Your Cassava Leaf Stew looks wonderful and very tasty. When I was in Sierra Leone, a coastal country, I enjoyed so much seafood in Cassava Leaf Stew. There were oysters, shrimp and smoked fish; all the wonderful sea flavors that gives Sierra Leone's food it's great flavor. :) Peanut butter was put in Peanut Butter Soup.

This is NOT how it is cooked in my household or any other SL's I know. But if it works for you so be it, just don't say that's how it's done back home.
