Simple and CRAVABLE Rabbit Recipe -- Meat We Raised

We love raising our own meat animals on our homestead. This is one of our favorite rabbit recipes: Rabbit in Creamy Mustard Sauce. Farm-to-table doesn't get closer to home!!
This recipe out of the Seven Rinella "Meat Eater" Fish and Game cookbook is definitely one of our favorites, 10/10! It provides the exact right combination of tangy, savory, and creamy and pairs beautifully with a starch or salad. Here is the list of ingredients:
1 3lb meat rabbit (Try with Chicken Quarters!)
Salt and Pepper to taste
2Tbsp Vegetable oil
3Tbsp Butter
1 chopped shallot
2-3 minced garlic cloves
1 cup dry Vermouth or white wine (I have used Sherry and even Kombucha!)
1 cup bone broth or other stock
3T grainy Dijon or country style mustard
1 Large spring fresh Tarragon (I use 1T dried) or Thyme
3T Chopped flat leaf parsley (I use 1-2T dried)
Accompaniments (Noodles, rice, potatoes, whatever you like!)

I butchered our first rabbits and prepared this dish... delish! Thanks so much for your videos! It felt so good to have accomplished the rearing of our first livestock animals and then to feed my family such a yummy meal!

I've had a pet rabbit and I've eaten delicious rabbit with paprika (Moroccan). You can both adore baby bunnies and enjoy eating grown rabbits.

Rabbit is superb eating. I likely it carefully roasted using plenty of unsalted butter and some olive oil. Red currant jelly accompaniment and rich, wine gravy. You can add button mushrooms and a little onion that glazes in the pan. Yes, cream thickener with a little plain flour..... YUMMY!

I love rabbit. I made rabbit stew when I first moved into my apartment. I took photos at the major steps, and put them on Facebook as I moved along. At first people were kinda freaked out, it was a bunny after all, but once they saw the result when I pulled the dutch oven out, they started to come around. I shredded the meat, and put it back in, and also took a cup of the stock off of it, and made up a mix of that and some corn starch, to thicken it up. Put it back, gave it a stir, and a dash of salt and pepper when I bowled it up. I set some aside for my mother, but when I called and told her not to cook supper, she turned her nose up at it. She grew up eating rabbit and lamb on the family ranch, and now won't touch it.

Wow! I wonder if the rabbit your mom ate growing up just wasn't cooked properly. The way you made your rabbit sounds delicious!! We love rabbit. I hope our kids still love it when they are adults.

@@SageandStoneHomestead we all grew up poor, so we ate what we had. As a kid, we were constantly shooting rabbits. By the time I was around, my great-grandfather had stopped being a sheep rancher, so I never grew up eating lamb most of the time. I'm the same with watermelon. We would load up the truck with me and my cousins, and my uncle would drive us down to George Strait's hometown where we knew a guy that had a watermelon patch by the Frio River. We'd load up the truck with them. Ate so many, I just can't bring myself to eat any to this day.

That looks wonderful! Definitely going to try this, I have several rabbits ready to be processed. As you pointed out rabbit is very dry and needs some special attention to improve that! This looks very good! I've never been a huge mustard fan until I tried a honey dill mustard. I make my own as I can't seem to find it anywhere. It's just plain mustard, honey (your own is always best! 😉) and dill weed. I just heat it very gently & adjust the honey & dill to taste. I'd love to try it in your recipe!! This actually looks really good, I've never had rabbit but my husband used to raise meat rabbits when he was little with his dad he says they are really good. I've had frog legs so never know i may like it.

If you like frog legs you'll like rabbit! It has that same texture and bite but frog legs are fishy.

I have never seen quail eggs peel that easy nor have I seen them boiled in a pressure cooker!! You learn something new everyday 😊…our family loves pickled eggs even more so quail eggs but its a losing battle in my house cause my husband and daughter NEVER lets it sit for the two weeks and they drive me nuts because I can never find out how well it taste by two weeks comes around!! 😊

Just watching this great video. Your rabbit pieces look pretty large. How old are your rabbits when you dispatch and process them? I processed one of ours at 9 mo. in order to replace her with a more docile doe. I watched your video on butchering. It was very good. I got five lbs of meat from the 9 mo. old. We’ve been processing at 15 weeks and get around 2.5 lbs.

We breed Californian meat rabbits and get about 3lbs of meat from a 10 week old rabbit when fully dressed out! The colder seasons sometimes they grow slower and likewise when it is really hot.

Seriously, people need to evolve already snd leave animals the he’ll alone. Quite sad that your killing domestic rabbit to eat. They are the 3 rd most adopted pet in the US. I have several rabbits my oldest is 14 1/2 and the youngest is 8 years old. The thought of killing and devouring these innocent intelligent pets is a disgrace. I rescued 53 rabbits from a slaughterhouse house snd 127 that were dumped in a lot to guy that was torturing them. We posted on you tube to bring awareness. Anyways, this appeared in my feed. This is just so heart wrenching knowing how sweet rabbits are is doing how they look up to there family nembers(their human) one if my rabbits has a human heart pace maker and is thriving. I paid about 10,000 just for that one rabbit who has so much personality snd life in her. They are easily litter trained and meticulously clean. His selfish of you and others who eat domestic pet rabbits or any animals. You don’t need to eat animals to be healthy. I don’t usually comment but this strikes a cord. Please do your research, this is plain horrific. You get everything you eat now in a place t based diet. I e been vegan over 23 years and I’m perfectly healthy. The only supplement I take is B-12. I’m never sick, I have long thick hair, nice skin snd fit. Why clog your arteries with cholesterol and animal flesh. To me it’s gross. My body will never be a tomb for innocent animals and I feel good I don’t participate in paying anyone to kill an animal. No excuse. Watch Domenion on you tube to see what the animals go through to have your animal processed. It’s sadistic. This is horrible it’s like killing snd cooking your cat or dog

We know what the animals go through because we breed, raise, and butcher them ourselves, on our land. We have our hands literally in every step of the process and are extremely proud of it. This is not the channel for you, and the youtube algorithm was wrong in promoting it to you. Understand that the whole world doesn't function the way you do and not everyone has to live like you to matter and make a positive impact on their community. We would never put 10,000 into any animal but if that's your prerogative that is tour decision and I'm not here to chastise you for it. Rabbit is extremely common to eat in many parts of the world and so is cat and dog in other areas. I'll never push my ideals onto anyone else and if they can do things ethically like we can, I say good for them for providing for their families.

Thank you for being respectful. Yes it ended up in my home feed. That’s why I commented. It was distressing to me. I’m an animal activist aside from owning my business. I have just witnessed things I cannot unsee in the animal processing industry. Your right you cannot force our ideals on anyone. Well at least you said you are there the entire time and I’m hoping they dont feel anything and your not a factory farm. In a perfect world in my vision there would be peace amongst people and animals. Check out Eat more plants on you tube to see the array of things you can make as well on a plant based diet. @pegerickson we are not a factory farm we are a family farm and do what we can to provide for ourselves. We will never be vegans however I'm glad you're happy with what you're doing.
