Quick and easy weeknight meals are my thing. And it honestly doesn't get any easier than this pepper beef stir fry. It comes together in about 30 minutes and you probably have most of the ingredients already.
I used red and yellow bell pepper and a yellow onion but you can use any veggies you like. That's the best part about this recipe. It's a great way to use up what you have in the house already.
