It’s tomato and garlic confit. It’s pasta. Of course, it’s tomato and garlic confit pasta - basically the trifecta of things I’ve become well-known for. The tomato and garlic are slow roasted in lot of olive oil until sweet, jammy and caramelised. They are then blended together with some cream and tossed through pasta with lots of parmesan. I have also served this quick and easy pasta sauce with some tender and juicy chicken breast for those after a little extra protein.
