the thing about sharks fin soup is that, its actually just chicken and crab stock. Sharks fin itself is tasteless, they just put it in and call it sharks fin soup. You are basically drinking chicken and crab soup, and its delicious.

Yup, and in fact most hotels do not actually serve sharks fin soup anymore. Shark's fin was used more for the texture and the symbolism that came along with it. Now you can enjoy this wonderful dish without feeling the guilt!

@@MsEverAfterings So you are saying now this so called shark's fin soup no longer contains any slice of sharks fin, just chicken and crab stock? I'm a bit skeptical because 2 years ago I had it and if I hadn't put some soy sauce and pepper, it had a fishy smell.

Atas is not used by those who can understand Malay (race doesn’t matter as Malay is an easy language to pick up & pretty useful in our region) as it literally means “upstairs” or “above”. Everyone around me uses “high class”. I’m Peranakan.

I feel bad that you get so many hates from the drink video. Everyone have different taste and opinion on food/drinks. Hope it doesn’t affect you. And I love Mala so much, I can’t take spice too, so I always order mild spice 🙂

Try the one at Old Airport Rd! Ask for all flippers which is the 'jelly' leg part and no meat (will be more expensive though) and get more of the delicious chili sauce to go with the flippers. Soooo good!

Rojak. You have got to try it. There's Malay Rojak, Chinese ROjak, Indian Rojak and quite a few more. It's a fruit and veg salad but not Indian Rojak which is a full-on sensory experience if you can watch it up close while it's being made. Do more 'weird' food but not because you've grown to like it. If you're on a walkabout and out of the blue, you can see that there's a little food shop with something hanging in the window, just go and ask what is it, how much, how do you eat it and have some.

A lot of restaurants when they are preparing shark fin soup nowadays, there are not real shark fins in them. They use some other substances to replace shark fins because knowing that the younger generations are growing and the older generations are diminishing these restaurants are trying to appeal to the younger generations with their care for environmental movements. Turtle soup on the other hand, the turtles in there are actually farm-grown turtles. I understand the stigma behind the name "turtle" but seeing that it's farm-grown I honestly don't see the rationale behind disliking the dish simply because if you dislike that dish using the ideology of cruelty then it can be said the same for Chicken, Beef, Pork, Lambs, Kangaroo, etc.

I can relate to the chendol. As a Singaporean, growing up the "green worms" always scare me. I only finally tried chendol at a Malay wedding a few years ago 😅. But I've always love frog legs since I was a kid. 😄

omg shark fin soup is my guilty pleasure too! i hate the idea of it but it’s really sooo good. they do have fake shark fin soup at pasar malams (night markets/bazaars) though, and to me it usually tastes just as good and are really cheap too (like $2 a bowl), so maybe justin can go for those instead if he wants to eat shark fin soup again?

The shark fin meat doesn't actually contribute much to the flavour of the dish. I recommend trying the vegetarian shark fin soup where they don't actually use any shark meat. It taste just as good if not better, depending on where you get it from.

@@thomaslwk1 It's not the taste, it's the texture of the fin. It absorbs the broth in the "combs of the fins". When I eat them, I love smashing the fins with my tongue against the top of my mouth. It's DELICIOUS..............

Have you tried century eggs? Some people love eating it just with some picked ginger (which I don't really like), but if it is cooked in a porridge with some meat and salted eggs, I simply love it. You should try it and see if it is your cup of porridge (tea).

Cendol is great! Looks weird cause of the "green worms" hahahaha but it's definitely a specialty for Malaysia. Also seaweed is THE BEST!!!!

Hey Georgia, Actually the green stringy bits is "chendol" - star of the dessert mixed with read beans, coconut milk , gula melaka (palm sugar) and ice shavings. I love it too especially on a hot afternoon. In Singapore, when porridge is mentioned - more often than not we are referring to "rice" porridge. In the UK when porridge is mentioned, it usually refers to grains like oats. In English, raddish and carrot is obviously different. However in Mandarin, carrot refers to the orange root and white carrot refers to raddish. Therefore "friend carrot cake" really refers to fried raddish cake. FYI...

If you’re looking a less sweet version of the condensed milk, ask for evaporated milk. I usually get Kopi C Siew Dai (Coffee with Evaporated Milk, less sugar) or Teh C Siew Dai (coffee with Evaporated Milk, less sugar). If you don’t indicate the C, the default is condensed milk

You can cook your own mala dish at home. Just blanch all your ingredients first and use the Hai Di Lao spicy sauce for stir fry for cooking all the ingredients. Adjust the spiciness yourself so you can control the heat!

Always enjoyable to see non-Singaporeans enjoying our cuisine! :) Mala (麻辣) is more of a flavour than a dish! It translates to "numbing-spicy", and the numbing feeling you get is a special pepper that comes from the Sichuan region. You get this as an option when you head to hotpot restaurants around Singapore. I suppose what you had (and beginning to love) was Mala Xiang Guo, which as your friend said is a relatively new item in Singapore. It's popularity has skyrocketed in the last few years! I find it helpful to have a bowl of rice with the ingredients so that the spice doesn't overwhelm you.

Fish Porridge and most fish based soup/noodle soups use a fish commonly called Batang fish aka Narrow-barred Spanish mackerel aka tenggiri batang for the high fat content & melt in your mouth texture. Most porridges in Singapore are cooked till it becomes this perfect melty texture, ie. Cantonese style. They heat it up and start to add the remaining flavourings and meat in upon order. That's why it's so good. Always add an egg, for extra creaminess.

The first time I had Bandung in 2013, I was blown away. No visit to Singapore since then was ever complete until I've had a glass or two of Bandung. I'd purposely look for a hawker center that had it and that would be my "to do" on Day 1 in Singapore.

The "carrot cake" that you are referring to is not carrot by the way. Its a type of radish but decades ago, it got lost in translation.....

Yup! Radish in Chinese is actually known as "white carrot", so perhaps that's why it was named carrot cake! 😄

There are 2 versions of carrot cake. Black and white version. They are basically the same, except they added black soya sauce to make it black; hence the savoury taste.

I kinda LOL at the part where you shared about your tea preference. I recalled the "Asterix in Britain" comics where the British are caricatured as people who preferred "spot of milk" in everything they drink, which is totally opposite of you two. Then again, Asterix is created by the French....

Due to activist pressure in the recent years, most restaurants here in SG typically substitute the shark fins with mock ones made with gelatin or agar-agar. Though one could still order the actual fins at a higher price.

Georgia! You definitely need to try frog legs porridge from Geylang. It's amazingly delicious! Also, there are "fake" shark fin soups that you can enjoy without feeling guilty, it's the same soup without the actual shark fin (; please do a couple spicy challenge!

Kopi C kosong is my go to coffee at the hawker. C for the Carnation milk (evaporated milk) and kosong for no sugar. Add bing for ice and it's the ultimate afternoon perk me up

You're so right about the whole 'porridge' thing! I'm studying in the UK and in first year I was cooking pork porridge and my flatmate asked me what it was so I told him. He gave me a really weird stare, but eventually I managed to explain what it was 😅😅 nowadays I say 'congee' when in UK to avoid confusion with your sort of porridge (btw the rice isn't glutinous rice, however it's cooked for so long that it becomes starchier and stickier, but it's just your normal rice)

wow i just saw this! another tip for mala from my chinese friends who are absolute pros, they order mala but tell them to get rid of the oil afterwards. like go home and drain it or they can do it for you. its much more enjoyable and so much better!

Try Chai Chee Pork Porridge! Their lean pork and century egg porridge is kind of a comfort food. Fried hokkien prawn noodle (not the soup noodle) is probably one of the best local food imo -- the prawn and pork stock, paired with sweet and savoury sambal, make the dish so flavourful

Hi Georgia! 🙂👋 Condense milk is sweetened. Not every milk tea at hawker centres or coffee shops contains condensed milk. Try ordering "teh-C kosong". It's basically black tea with evaporated milk, no sugar added.

If you think you love the taste of shark's fin soup but can't eat it due to your beliefs (like me), a great alternative is fish maw soup :) The consistency and taste are highly similar and you can easily find it at hawker centres too.

Most restaurants in Singapore don't put real sharks fin in shark fin's soup anymore. They usually replace it with crab meat, but we still call it shark fin's soup for convenience sake and familiarity.

You got to try rojak! There are 3 diff types of rojaks - the Chinese, Malay and Indian versions. And you might want to try Mee Soto Ayam (it is like Chicken Soup Noodle).. If you eat beef, then myb Rendang, full of spice and tender meat.. or Murtabak! It is like prata but there are meats inside. You can choose chicken, beef or sardines as a filling.. Abit late, but just to share: For porridge in Singapore, there are the Hokkien style porridge and Cantonese style porridge. Hokkien = Fu Jian, China Cantonese = Guang Zhou, China or Hong Kong. The Hokkien porridge are more like rice in soup. The canto porridge is more grinded like oatmeal. Try doing food series in Singapore (Hunt for best canto porridge, hunt for Hokkien Mee, Hunt for Chicken Rice)

Nice to hear you guys got accustomed to Singapore food. By the way, the last dish you mentioned Mala Xiangguo is not a Singapore dish. It's a Sichuan dish introduced to Singapore years ago and became popular among the locals.

Chendol is the best becos its made from a lot of vegan friendly plant based , gula melaka, santan (Coconut rich milk), chendol from sweet potato starch, pandan leaves coloring and flavoring, icy cold on a hot humid sunny day. Yum , sweet relief

Air Bandung milk rose syrup drink was a treat only served on special occasions like Malay and Indian muslim wedding dinners, hari raya, kenduris celebrations ,more twenty years ago, nowadays it is ubiquitous, but a good quality bandung drink with real good quality rose water flavoring is hard to cone by, but the best will be at a traditional Indian muslim wedding banquet.

“If they’re struggling, I know I’m going to die.” 😂 You can request to customise the levels of Ma (numbness with the peppercorns) and La (Spiciness with the chilli) I hate that numb feeling on the tongue but love spice so I’d always tell the good guys that I’d like Lvl 2 of Ma & Lvl 4 of La. (Massive shout out to the good folks at Pasir Ris. No, I don’t live there.) Different places have different systems so do enquire first but it is possible to customise the flavours to your liking!

FYI. Fried carrot cake is made with rice cake fried with Salty pickled daikon radish. Which the locals call “white carrot”. hence the name “carrot cake”

Try the Fried kway teow dish over at old airport road hawker centre again, some good ol' Western dish like chicken chop, your's favourite chendol too, and a light challenge, go with a dash of durian. I know not alot of foreigners like it because of the smell. I forgot the stall's name, but it is managed by an elderly couple.

Hey Georgia and Justin, you should try the chendol in Malacca. Go to Jonker Street and look for Jonker 88 store. It's literally the best chendol I've tasted. As for a good frog leg dish, you can go No.2 Braddell Road, Hong Chang Frog Porridge. It has been very very popular but only open in the evening. I think it closes on one of the weekdays and parking might be a nightmare because this shop is located just beside a road junction with few parking lots.

3:41 Here's another unusual food suggestion for you guys! Other than turtle soup, you guys should try gui ling gao, which is also known as "tortoise/turtle jelly" because it used to be made with turtle shell powder. Nowadays the commercially available versions don't contain real turtle shell, so you can eat it without worry! It tastes like grass jelly, and it's believed in Chinese medicine to have health benefits like cooling and complexion 😄

Food is what unites all of us. Do you guys like bak kut teh and pratha? Rice dumplings (bak chang), soupy prawn mee, wonton mee with char siew, beef rendang? Really cool that you both enjoy chicken porridge... looks a bit daunting at first but really comforting..

Try the Ah Heng Curry Chicken Bee Hoon. Get the thin Bee Hoon without the bean sprouts and add chilli.

You may continue to have sharkfin soup. Through the years, most restaurants did not take part in having the real shark fin as ingredients anymore. I believe it is a mixed with fish maw, crabs and starch etc. It tastes pretty much the same too! Just more environmental friendly, to the sharks at sea :)
