Finely minced raw garlic is one of three primary heat elements in my pico de gallo recipe, medium heat. The other two heat elements are jalapenos and common garden variety radishes round out the three. Add in finely sliced rings of green onion, finely minced white onion, finely diced green, gold and red bell pepper, finely diced tomato, lemon or lime juice either will due, fresh squeezed is best. The citric acid adds zest, flavor and doubles as a preservative (along with the salt) and makes your salsa fresca last all week in the fridge. Don't forget to season with salt to taste and bust out the f***ing chips already! The citric acid will preserve this blend for up to a week but every gallon I make disappears in two days in our house. If you want it hot you can add any number of really hot pepper like habaneros or even those Indian ghost peppers if you don't value your internal plumbing or somehow enjoy sh1tting fire for two or three days. :P Seriously though, y'all did a great job tag teaming the fondue so maybe you're ready for pico de gallo. It means peck of the rooster or rooster bite... something like that. But, it's a few fresh ingredients combined with a lot of love and steady knife work so it's salsa fresca and is a simple blend of fresh ingredients, not cooked in any way. So, the farmer's market is your best bet if you have one nearby. You can double, half or multiply this recipe which makes a quart or so of pico as written. two pounds of fresh tomatoes finely diced (get the freshest, reddest, most aromatic tomatoes available) 2 green, one red and one golden bell peppers finely diced 6-12 jalapenos finely minced 2-3 bunches of radishes finely matchstick cut so they actually look like tiny match sticks 2 bunches of green onion finely sliced into tiny rings 3-5 cloves of finely minced raw garlic cloves I often use two bunches of cilantro but you should at least add one bunch all finely chopped removing as many stems as possible. It seemingly takes forever but I pull each leaf individually from the stem before I chop the cilantro. Stems are never good to find in your weed stash or cilantro. (I use two or three large cloves or more if they're tiny) all the freshly squeezed juice from 3-5 lemons or limes, your preference and finally add salt to taste while stirring all the ingredients together in a large bowl. You can dig in immediately which is hard not to do after smelling the beautiful aroma develop in your nose for an hour or more. If you have bad knife skills this recipe can help you hone them. Just be careful. This is the most knife intensive recipe I know. You wash your veggies then you cut the veggies it is simple yet difficult to master at the same time. Twenty plus years ago, when I still worked in a kitchen daily to avoid starving as a professional musician, I could generate enough minced veggies to make a gallon of pico in about an hour. At 53 it takes me all afternoon! Speed with a chef's knife can take years to master and those skills deteriorate quickly when you don't use them daily. I can still make a masterful presentation with my knife work it just takes me forever now and I usually recruit family members to help. This recipe is pretty versatile too; stir in several creamed avocados and you get guacamole', add diced papaya and or mango for more salsa fresca combinations. I'm no professional, but given personal experiences with cleaning melted cheese that's cooled and hardened into a dish, the garlic may somehow prevent or at least help with clean up afterwards? Like maybe it lessons the cheese's ability to bond to the surface? That's my guess at least, since if it was just for flavour it'd make more sense to just add it to the mix. The way the mix kept sliding down the sides without leaving much on the pot walls as you stirred makes me think that might actually be the case.

I think they wanted you to rub the garlic inside the pot because many people don't crush garlic and that is pretty necessary to getting a good garlic taste, even chopping garlic won't have the same effect as crushing it

I think it would be cool if you guys answered some questions during some of the "down times" of the episodes. Such as when mixing or chopping. Not that your guy's commentary isn't awesome, just to add just a little more to the videos. And I'm also only talking like 2-3 questions. Keep up the awesome work guys!

Right now I'll probably stick to doing Q&A type content on my livestreams, it's probably the best way to ask a question and get an immediate response. I like the idea of doing it for the cooking videos, but at the same, keeping the videos just about the cooking makes it easier to try and get new viewers to watch it, or people who are watching for just the recipes from the cookbook.

I think the traditional recipe for cheese fondue doesn't have the garlic cooked in it, they just rub it in the pot to give a little flavor to the fondue ;) But Kajit likes garlic! :D

@@0periodproductions the only reason mention roasted is the recipe you guys have in the book is almost the recipe for the fondue at the resort I used to be a sous chef for back in school. Roasted garlic is the only difference.

I think you are actually supposed to cook the garlic onto the pan bottom to season it. Sometimes it is called sweeting the garlic.

Made this recently. I added a little old timey mushroom ketchup, but that's it. It's good with apples, ham, roast beef, potatoes, and tomatoes, if you want to try some dippers!

You should be using regular steel sauce pans for this recipe. I'm not sure what would be accomplished by rubbing garlic on a surface that nothing sticks to.
