The Backyard Griller update: I don’t know if you can help or not, but finally put together my pit boss and I can’t keep a steady temperature. After letting it warm up on smoke setting for about 20 minutes, I set the temperature at 250 but it goes up to 315~330. I have the P setting on P5.
Ivan Guerrero mine does that also when the auger is feeding pellets but it stabilizes quickly. Does yours stay in the 300's? Have you opened up your stack? If it is not open it will get much hotter.

I have a question when you smoked the food did you have to turn over the food as a regular charcoal grill or leave as is just moved over side to side??

jj00148 after I cranked it up to 400 the bacon was done in about 10 minutes, the sausage was pulled off at about the same time as the burgers, about 5 minutes after. Thanks for asking and for watching.
