Brisket Street Corn Stuffed Jalapeños on the Pellet Smoker
What happens when you combine brisket elotes with smoked stuffed jalapenos? You get these fantastic pellet grill appetizers - brisket street corn stuffed jalapeno poppers! A great way to use your leftover brisket!
You've heard of the popular smoked Texas Twinkies recipe, which involves stuffing jalapeno peppers with a cream cheese mixture… well, this is the Mexican version of the popular smoked appetizer recipe! We’re starting with a simple grilled corn mixture with cream cheese, shredded cheddar, elotes seasoning, and a few other ingredients. Then, we add chopped leftover brisket. Grill the jalapeños for a bit to soften them up, then do a canoe cut and remove the seeds. Stuff the jalapenos with the brisket street corn mixture, wrap in bacon, and grill up these fantastic appetizers!

After knocking out a brisket and now running low, next you should try pastrami. Sure it takes up fridge space for 10 days or so while you brine it but then it smokes pretty easy. I do a pretty basic pickling brine with the pink salt but add a mess of szechuan peppercorns. Rinse and dry it put a black pepper, szechuan pepper, coriander rub on it. Smoke it, when it hits the wrap stage I put it on a baking sheet with a rack, mostly wrap it with foil, pour in boiling water until its almost touching, seal it and steam finish. And you got some top notch pastrami for days. And pastrami has tons of uses on the griddle. Like a pastrami hash put in egg ring molds and used as the english muffin in a eggs benedict.

the only thing I would say different is to smoke the cream cheese with your seasoning. It would had a ton of smoke flavor...and make the cream cheese more pliable... but I love this idea and im going to try it. OH!!!!!!!!! As well as... I think "Mexican street twinkies" is a better name :P

I have been a brand ambassador for bear mountain for a couple of years now. I find them to burn cleaner and are more efficient burning, meaning the hopper seems to last longer than other brands I have tried. That is not company speak, that was my own research and then reach out after coming to that conclusion. I hope you find similar results. I cook on a Grilla Grills Silverbac.
