When i was a kid, we lived in Canada and had a little river out behind our house. In the river was a little bump of land we called an "island... " taking liberties. However, on one side, was quite a good "hole" where the cats liked to lay. After catching a few, we'd just be-head and strip the innards, then roast them on a stick over an open fire and let a pat (or three) of butter and sit there and pick it off the bones. So many years later, I swear I can still taste it. But this looks like the other way I'd like to eat it, ill be trying it soon. A tip... for your viewers. When cleaning your catfish, many people claim they taste "muddy." Thats because there is a filter, called a "mud strip," that runs along the top/back of the fish. Remove this strip and you'll never have a "muddy" fish again. :)

I just ordered and received both of his Cook Books. I was so excited to get them and so disappointed that I hadn't ordered them sooner. They are well worth the investment and are top quality, no I don't know Kent or Shannon but I feel like I do after reading all the stories and see how much work that went into them. Hell of a time to get a catfish recipe notification while I'm out here at the lake fishing. *drops bass rig* *picks up channel cat rig* "Here kitty-kitty, Kent has a damned good soundin recipe for ya!" Maybe if I apply my phone speaker to the line, the vibration of Kent's voice might entice the catfish to bite knowing they'll be cooked just right. Here's hoping. 🙏

As Kevin Pitt II mentioned, with all the nasty things going on out there in this great country, as an immigrant who grew up in the south, I love this channel. To me, this is classic Americana, and the Cowboy, Shannon, and the quality control staff bring a sense of normalcy. I love the U.S. flag in the background flying around in the wind in all its glory. Keep up the great the work Cowboy Kent and wish you all the very best always. We all need to be grateful to live in this country, and you know, I am not a big fan of catfish ( I am a steak/meat and potato dude), but I am gone give this a try.

Kent Rollins was not lying. That smoked catfish was delicious. I used cherry wood since I couldn't find peach. Everyone loved the tartar sauce. I made mine with extra capers to make your mouth pucker. Keep the great recipes a coming.

Brother Rollins: Down in South Texas (just south of Kingsville) is a seafood restaurant called Kings Inn. Best gulf shrimp and fried drum you’ll ever eat. Their “secret” recipe for their tarter sauce has to be very close to what you made. But I’ve been told there are some crushed Ritz crackers added that gives it some body. But that horseradish (I am sure they chop it up fresh from the root) just makes you do the Kent Rollins shuffle. Google Kings Inn Tarter Sauce recipe.

I use the same ingredients plus add: 1 cup mayonnaise 2 teaspoons Dijon or Creole style mustard 1/4 cup parsley leaves 1/4 cup chopped fresh chives Salt and Tabasco sauce to taste I just received your cookbook. I am reading cover to cover. Plus adding sticky notes like you do.

I have been camping for a week and I am camping watching this right now and I find this interesting. I saw someone catch two Catfish once and the fish was huge! I was 9 or something when that happened one time a few years ago.

I'm always looking for something the non-beef eaters in the family will eat so we gave this a try. Very good, and even added a little of the new bottle of Red River Ranch seasoning to the mix, yummy! :) EDIT: This is the ONE recipe that my family requests OVER and OVER. I'm from North Idaho. We have plenty of alder here. We use it to smoke blue backs "kokanee salmon" . I will definitely try this recipe next. Love you videos.

There is nothing as good as fresh catfish. I wish we would have had this recipe when my wonderful boyfriend cook some for me. He had went fishing in eastern OR. I looked on RU-vid and found one . But I am saving this for next time thank you

Keep it light, keep it mellow, is great advice for fish. When I lived in Alaska, Alder was the #1 wood for salmon. I can't wait to try some frozen farm raised catfish fillets in my new electric smoker. I'll be going for a Cajun flavor and will smoke some jalapeno peppers at the same time. Some of the roasted peppers will go on top of the served fillet and then covered with a hollandaise sauce. With a side of asparagus tips and rice, I'll be in heaven.

A cousin of mine down in TN had a catfish place. Catfish dinner with cole slaw and hushpuppies was all she served (along with soft drink, iced tea, or coffee). Mmmmm, good! Thanks for the memories and video!

Thank you guys for making me laugh every single week. I love catfish. Every time I go to the store to get groceries I see catfish. In northern Minnesota on the iron range where I am from they have, walleye, perch, bass, and northern. Catfish tops all those fish. The flavor is so much better. 🤩💯

Growing up in East Tennessee, I've ate my weight many times over in catfish. Northern caught walleye or perch from y'alls cold, clean water is a delicacy to me. One of the best meals I ever had was in Northern Wisconsin. It was perch and fried eggs for breakfast. Breakfast!

Oxymoron: French’s Worcestershire. Kent, Justin Wilson always said the only Worcestershire is Lea & Perrins. They invented it, and like CocaCola, no one else has ever figured it out.

Carp is good smoked low. Gut it leave the skin on. Fill with lemons and limes sliced up and a hefty bit of juice from both. Salt the meat lay the fruit in the belly cavity and smoke low. The acid from the fruit dissolves the smaller bones and helps flavor the meat. I don't get too fancy with it but it is pretty tasty.

I happen to have two filets in my freezer from our trip not too long ago. I got lucky and had 3.9 pounds of dressed fish to take home. I fried up the little one pounder and all the fingerlings from the big one. I froze the two from the larger fish. Thank you so much for showing this smoked recipe. God Bless

Looks great ill have to try. We skinem guttem & seasonem then layem upside down stuffem with yellow orange or red bell peppers onions jalapenos & mushrooms coat foil paper wrap the fish and throw them on a smoker or grill then use corn tortillas for some delicious fish tacos.

I tried your brine on tilapia filets from COSTCO and it turned out fine as frog-hair smoked and glazed with maple syrup !!! I use a bullet smoker and hickory for smoke and heat ! Thanks for the recipe !!!

79 years old and I have never had catfish in my life. Tried it because I haven't had one of your recipes sent back yet. It was good! Surprised me because it didn't even taste like fish. Just fine dining. Traeger smoker with applewood chips. I'll do it again.

I used to love to go catfish fishing on a still, warm summer evening and just sit with my thoughts...until of course that reel started bending and that drag started to screaming. They put up a great fight and also taste just right. Thanks for the tartar recipe Kent. I've tried many concoctions and have pretty much settled on something pretty similar to yours. When I finally started keeping capers in the fridge and adding them to the mix, that's when my tartar sauce became "just right".

Try soaking some corn cobs the place them on top of mesquite charcoal it's how I cold smoke my dry sausage

We catch a lot of catfish living 15 min from the Great Pee Dee River here in SC. Grew up just knowing fried catfish. Well we ate so much my wife wanted something different so we baked some grilled some and then one glorious day about 6 years ago we smoked one. Man oh man. That suprised my grandpa and myself and we fell in love with smoked catfish.
