I'm using my Pit Boss Pellet Smoker today to smoke these turkey legs but you can use any kind of smoker. I like to smoke them at 250 degrees F because this gives them enough time to absorb some good smoke flavor and allows the skin to firm up.
I brine all of my smoked turkey overnight with my tried and true turkey brine.
