Sorry for the late response. It was at about the two hour mark when I wrapped. Really I just look for that color I want and wrap and let it tenderize. Hope your turkey legs came out great. Keep bbqing buddy

I think brining is so overrated. Only the skin soaks the brine up so unless you inject it’s such a waste of spices and time. I’m glad to see I’m not the only B&B fan boy. I also don’t like my meat to fall off the bone. Got a buddy with a smoker on his food truck and he wraps his turkey legs in foil when he smokes them. They hardly absorb any smoke and they completely fall apart to the point where I need an effing fork to eat it with. Anyways great job
