I used both ways, chilled and one kept at room temperature.I did not find any difference when they are baked.When we use chilled chocolate it takes longer time to proof. So if your place is really hot, just keep the chocolate in fridge and can use it for filling.Other wise it's not necessary to use chilled chocolate.

Yes you can.I am not sure how long it will take ..but make sure the dough passes the" window pane" test.If it takes longer than 8 minutes, just stop the mixer and wait for some time ;and then continue kneading.
