I had these Bok Choy Steamed Vegetable Buns recently at Paradise Dynasty. The steamed buns tasted very good, so I tried to make it. At first, I wasn't sure what vegetable was used to make these steamed vegetable buns. After watching several RU-vid channels and looking up a recent recipe book I bought specialising in steam buns and dim sum, I realised they used Bok Choy to make these vegetable buns.
I usually use Hong Kong Flour to make steam buns as the success rate is higher, the outcome is better and it is easily available in Malaysia and Singapore. But when I tested this recipe with Hong Kong flour (used unbleached flour) and plain flour, this was the outcome:
(1) the steam buns using plain flour was softer and it also remained soft at room temperature.
(2) As for appearance, the steam buns using Hong Kong flour is more smooth and holds its shape better.

I have done quite a lot of testing on plain flour and I think this dough recipe that I'm sharing with you is the simplest way to make steam buns and best of all the steam buns turn out soft and fluffy.
💗 Important notes:
1. The Flour I used in the video is Prima Brand Top Flour. This is a superfine plain flour. But you can use normal plain flour. This flour has 9.5% gluten. So if you are using a higher gluten flour, the buns will come out more chewy.
2. The whiter the flour, the more white the steam buns will turn out.
3. Water absorption rate depends on the quality of the flour.

140 ml water, room temperature 水,室温 140毫升
30 ml vegetable oil or any neutral tasting oil 菜油 30毫升

500 grams bok choy 小白菜 500克
4 cloves garlic, minced 大蒜 4瓣,剁碎
7-9 shallots, sliced 小洋葱 7-9粒,切片
3 shiitake mushrooms, soaked until soft and diced 香菇,3粒 浸泡到软切小丁
3-4 tablespoon vegetable oil 菜油3-4汤匙
