Sourdough Master Dough Recipe @MelissaKNorris
INGREDIENTS:
2 cups active sourdough starter (400 grams)
5 cups bread or all-purpose flour (700 grams)
1 1/2 tablespoons salt. (20 grams)
2 cups water (456 grams)
INSTRUCTIONS:
1. Mix together all ingredients in a 4 and 1/2 quart bowl or larger.
2. Allow dough to rise until just doubled ( anywhere from 2 to 4 hours depending on maturity of the starter and warmth of room)
3. Place in fridge for at least 8 hours before using and up to 5 days.
MASTER DOUGH CINNAMON ROLLS:
Made in pan glaze.
1/2 cup butter
1/2 cup brown sugar
Cinnamon Roll Dough
1/2 of the master dough
1/4 to 1 cup all-purpose flour
Filling
1/4 cup melted butter
Cinnamon to taste
1/2 cup brown sugar
Raisins, chocolate chips, nut or other dried fruit (optional)
INSTRUCTIONS:
1. turn on oven to melt butter and brown sugar together. Use either a 9 x 13 baking dish or a 10 inch and a 6 inch cast iron skillet.
2. Dust your counter with flour and place your master dough on it. Sprinkle (start with 1/4 cup) flour on the dough and knead in. Until the dough doesn't stick to your hands or the counter.
3. Roll out into a rectangle. Spread with softened butter, sprinkle with cinnamon, sugar and topping of your choosing.
4. Roll up the dough like a sleeping bag and slice with a sharp knife or use sewing thread. Into 1/2 inch thick roundsand place in pans . You shoukd get 12 to 14 rolls.
5. Let rise for about 20 to 25 minutes until rolls double in size and touch.
6. Preheat oven to 375°f. Bake for 20 to 25 minutes until golden brown on top.
7. Remove from oven and immediately invert over a large plate or platter. Scrape any remaining syrup from pan on top of rolls.
