Ingredients:
17.63 oz. of lean pork meat.
17.63 oz. of lean beef.
8.8 oz. of cold water.
3 tablespoons of cornstarch.
.35 oz. of salt.
.17 oz. of paprika.
.17 oz. onion powder.
.17 oz. garlic powder.
.17 oz. cumin.
.17 oz. of dried tarragon.
1 pinch of ground black pepper.
1 pinch of nutmeg.
Preparation:
Chop the meats with the finest disc of our mincer. If necessary, pass them twice until obtaining a pasty texture (we can also use a processor).
Mix the spices together with the salt and cornstarch and dissolve them in the water.
We add this liquid to the meats and knead between 15 and 20 minutes (the more you knead, the more compact the final result will be).
Place the obtained pasta in a terrine-type mold, trying not to leave spaces with air.
Cook it for 3 hours covered with aluminum foil in a bain-marie, on a preheated to 120°C oven. (248 °F)
After 3 hours, remove it from the oven and let it cool by placing a weight on it.
When it's cold, put it in the fridge overnight.
The next day, remove liquid excess (it can be reused as a broth), unmold it and cut into slices.
It can be eaten cold as stiff, in sandwiches or hot (grilled/pan).
