Christmas in the Phillipines is not complete without Bibingka. A classic Filipino rice cake made special with toppings of salted egg, cheese and grated coconut. Traditionally, it was cooked in a clay pots lined with banana leaves and pre-heated in coals were placed below and above the rice cake. Now you can easily make bibingka in less than an hour in the oven.
INGREDIENTS:
preheat oven at 190C
bake for 30 -35 minutes
2 round baking pan ( 4cm x 20cm )
banana leaves, cleaned and cut in circles
- 3 pieces large eggs, beaten
- 1/4 cup water
- 1 1/2 cups coconut milk
- 1 cup rice flour ( giniling na bigas )
- 1/4 cup all purpose flour
- 4 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup sugar
- 2 large eggs, beaten
TOPPINGS:
- salted egg, cut into thin sliced
- melted butter, for brushing
- grated cheese
- grated coconut
