Cassava cake is a Filipino dessert made from grated cassava ( yuca ) and coconut milk. Best eaten cold and pair perfectly with a cup of coffee or tea.
Ingredients:
- 4 cups grated cassava ( yuca )
- 2 cups coconut milk
- 1 1/4 cups condensed milk
- (330 ml ) evaporated milk
- 6 tablespoon melted butter
- 1 tablespoon melted butter ( for greasing the pan )
- 1 cups grated cheese
- 1/4 cup sugar
For the topping:
- 1/2 cup condensed milk
Instructions:
Pre heat oven to 180°C
1. In a large mixing bowl combined all the ingredients and mix well.
2. Pour the cassava mixture into a greased rectangular pan ( 40x32cm) lined with parchment paper.
3. Baked until the cake set and the top is slightly browned. ( Approximately 1 hour )
4. Remove in the oven and pour the topping ,spread evenly.
5. Return to oven and continued to bake under the broiler for about 20 to 30 mins. or until the top turned browned.
6. Allow to cool before slicing.
