Bibingka is a type of rice cake popular in the Philippines. It is made out of rice flour, coconut milk, sugar, and margarine. This is usually eaten during christmas season and traditionally cooked in a clay pot lined with banana leaves.
Ingredients:
preheat oven to 190C
bake for 30-35 minutes
2 ( 4cm x 20cm ) round baking dish
- 1 cup rice flour ( harinang bigas )
- 1/4 cup all purpose flour
- 1 cup coconut milk
- 1/4 cup water
- 4 teaspoon baking powder
- 1/2 cup sugar
- 3 medium size raw eggs
- 1/4 cup melted butter, plus extra for coating
- banana leaves
For topping:
- grated cheese
- salted eggs
- grated coconut
