🌟 Ingredients:
3 tbsp Sichuan Peppercorns
1 2-inch knob of Ginger
3 tbsp Garlic (minced and smashed together)
2 packages Silken Tofu
2 Green Onions (diced)
3-4 tbsp Chili with Crispy Chili (used in multiple parts)
1/2 pound Turkey (ground)
2 tbsp Spicy Broad Bean Paste
1 tbsp Xiaoxing Wine
1 tbsp Soy Sauce
1/2 cup Chicken Stock
2 tsp Cornstarch mixed with 1 tbsp Water
Rice (to serve)
Optional: Cooked King Oyster Mushrooms and Chrysanthemum Greens
👩🍳 Instructions:
1. Toast Sichuan Peppercorns until fragrant, then grind them into a powder.
2. Dice and peel ginger, smash together with minced garlic into a paste.
3. Cut silken tofu into large cubes, boil for a minute, drain, and set aside.
4. Heat 1 tbsp chili oil in a large pan on medium-high.
5. Add ground turkey, cook until lightly browned.
6. Add the rest of the chili oil, crispy chili bits, and spicy broad bean paste. Cook for about a minute.
7. Add the garlic and ginger paste, Xiaoxing wine, soy sauce, chicken stock, and the cornstarch-water mixture.
8. Combine and cook until bubbly.
9. Add the silken tofu and green onions.
10. Optionally, stir-fry king oyster mushrooms and finely chop chrysanthemum greens; add to the dish.
11. Serve over rice, garnish with fresh green onions, extra Sichuan peppercorn powder, and optionally, a drizzle of crispy chili in oil.
