I made this tonight for Sunday dinner and it was easy and OMG delicious! I made two pans, one with the pork tenderloin and one with a big fat chicken breast. (my daughter does not eat beef or pork) I also added baby carrots, mushrooms and instead of the gourmet mixed potatoes (which would have cost me 7 dollars, I bought two skinny sweet potatoes and about 5-6 mini red bliss potatoes. Using the red pepper was a great choice. This the second recipe I have tried of Lauras that I was WOW'D by! Thanks Laura! You rock girl!!!
Serves 4 Prep time: 15 mins Cook time: 30 mins Ingredients: 1 lb Pork Tenderloin 1 lb of Potatoes cut into large chunks (or use fingerling and halve them) cooked until half way cooked through 1 Bell Pepper, cut into large chunks 1 Red Onion, cut into large chunks 1 Yellow Onion, cut into large chunks 4 Cloves of Garlic, chopped 1/2 tsp of Ground Cumin 1/2 tsp of Chili Powder 1 tsp of Granulated Garlic 1 tsp of Dried Parsley Flakes Salt and Pepper, to taste Process, 1) Preheat the oven to 450 degrees. 2) Mix together the cumin, chili powder, granulated garlic, parsley, salt and pepper, rub the mixture all over the pork and set aside. 3) In a large oven proof skillet, add the vegetable oil, allow it to come to temperature over medium high heat, add the pork tenderloin and sear on all sides. If your pan is big enough, add the veggies to the pan as well and allow them to develop some color. 4) Pop the whole thing in the oven and roast for about 15 to 20 minutes or until the pork is cooked to 150 degrees when tested with a meat thermometer. The reason why I love her channel is becuz of how down to earth she is and sometimes there are errors and that's what makes it better than the others is that shes so chill when she makes a mistake and at the same time the food is like perfection!!!😍
Nicely Done!!!! I did 450 at 28 mins Never opened and It's reading 170 internal temp after 5 mins of rest. This one's looking perfect to suit us. I did put the potatoes and veggies back in while the meat rest. Give them some good crisp Thank You So Much!! Funny the pets are like what ya cooking there

Sounds good! Since I'm allergic to pork, we always substitute pieces of meat like this with turkey meat.... so we'll try that version soon ;) Thanx again for sharing!
OMG Laura! You hit this one out of the park! First, because I love pork anything...and second because often the potatoes are better than the pork! Hahahaha! Hard to loose unless you don't eat pork...easy to switch to chicken breasts. ...I've already figured 3 more things you can do with this...wrap the pork in bacon, brush the pork with liquid smoke, or before putting it in the oven, fire it on the BBQ grill instread of the stove for the same length of time.

She cannot cook for the life of her and it was simply a joke, I am completely fine with her lack of abilities in the kitchen. Women do not need to be "trained" in anything. We are strong, independent, and are not put on this Earth to cook or serve anyone. Our "use" is to live a successful life and accomplish anything that we want to. It disgusts me to see this comment and I cannot believe you would talk about women in such a derogatory way.

Laura that looks so good. I've probably had pork tenderloin once in my life. It was okay not something that I would want again. I don't know if it was how they cooked it or the meat itself. This looks good though I might have to try this.
