Maybe do finger sized strips of steak. It's done in Chinese restaurants so I think it could work.

In Indonesia/Malaysia they do have dried condiment made out of dried spiced coconut shreds called serundeng, often times is used on cooked beef meat.

Might have been less sweet with toasted coconut shavings, I used that once with meatballs and a teriyaki style dip to go with them! Took over 3h to make a good batch and it disappeared under 10mins! 😂

yesterday. my boss brought us to a steak house where they has American piranha .Australian ribeye. etc. each costed more than 2 days of work for us at least so naturally we ourselves wouldnt go there. anyway. it is true that its like nothing of our beef we have here. it was medium rare. and it was TENDER . greek beef is.... not tender at all. now is the first time i can understand when they say its tender

In malaysia (and Indonesia and other South East Asian countries) the way they use the coconut shaving is by using freshly shaved coconut and sprinkle it with some salt, and it is good to use as dipping or sprinkle. Plus, the freshly shave coconut taste different than dessicated coconut. Anyway kudos to sous vide everything team 👍👍.

You should try toasting the coconut before using it for a crust. That way you drive moisture away AND caramelize some of the sugars so it's not as sweet.

Hey Guga! I wached almost all your videos from the beginning, and as the matter of a fact I started sous vide because of you! But I couldn't help but notice, you did not make sous vide goose breast yet. I highly recommend it, since it could be an interesting video and also it is delicious. I think it's even better than sous vide duck breast. Just give it a try, same old salt, pepper and garlic powder, a good bath, and its ready. Thanks, David

Guga can you do a comparison between a standard sous vide guga steak with a butter basted sear And my method of steak in the oven at 200 degree until you reach desired temp then butter baste sear? I have a sous vide and learned so much from you and I swear I prefer the low temp oven method best. I came up with it before I have a sous vide and once I got the sous vide I was disappointed!
