The most delicious Eggplant and Potato Curry you will ever try.
Spicy Eggplant/Baingan Aloo fry
Ingredients:
400gms - Baby eggplant (halved)
3 - potatoes (cut into wedges)
Dry Roast Spice mix
11/2tsp - Cumin seeds
1tsp - Fennel seeds
1tsp - Black pepper
4-5 - whole Kashmiri red chillies
Toast till changes colour and then grind to a powder.
Other Ingredients
1tsp - Coriander powder
1tsp - Turmeric powder
11/2tsp - Amchur(mango) powder
4-5 Cloves garlic sliced
4tbsp - Mustard oil or vegetable oil
Salt to taste
Fresh Coriander to garnish
Method:
• Start by dry roasting all your whole spices and grinding them to a powder.
• Add oil to a heated pan. Add your potatoes and fry for 3-4 minutes now add the sliced garlic and fry for 1 minute.
• Now add the eggplant and fry for 3-5 minutes till slightly soft.
• Add the turmeric and coriander powder and stir through for a few minutes on a med-low flame.
• Now add the dry spice mix (use as much as required) made earlier and mix through. Put the lid on and cook till the eggplant is cooked.
• When cooked add the amchur/mango powder and mix through. Garnish with fresh coriander leaves.
