How beautiful these look :D wonderful demonstration as well :) I've heard cucumber noodles called "coodles", which kinda sounds like "cuddles" to me, so I think that's an adorable name for them xD it's fun to spiralize stuff, and really, when I do it, it doesn't really take that much time :) still is too seldom, so thanks for the inspiration :D and for sharing, as always a joy

Great thanks for sharing. We grew a few cucumber plants last year and it was a good cucumber year so we ate all we could and we gave away 24. I'm hoping this is another good cucumber year (not always guaranteed when growing them outdoors in the UK) so I'm always happy to have new ways to use them, and this recipe looks so good!! Your dressing was feeling so Asian I starting thinking of satay, I wonder if it would be tasty to blend some peanuts into the dressing , I can't decide if peanuts and cucumber wouldn't work at all or if they would be delicious. x

I have both the Inspiralizer AND the Kitchenaid spiralizer attachment for the stand mixer. My KA attachment has been in the box since a bought it years ago because it’s a pain to use, whereas the hand turning Inspiralizer is easy. I always feel so guilty for it sitting in storage 😢 but it’s just a pain to use and clean.

I have a Kitchen Aid one, too that I don't use enough. I did get an older sweet potato stuck on it before! I though it would be good for things that were hard or impossible to spiralize without it, and I was wrong. The vegetable sheeter I use more. I'll try to get some vids up on using them too.
