Starting KETO (7 Ketogenic Veggies You Can Eat) 2024

Here are 7 ketogenic vegetables you can eat as much of as you want when you're first starting KETO (and one bonus!). All veggies have some carbs, but in certain veggies the carbs are low, and so locked up in the fiber and surrounded by vitamins and minerals that they are effectively ketogenic.
If you don't like one or more of the veggies on this list then you will be happy to know that new research is showing that you can retrain Your Palate! It's not too late to learn to enjoy these veggies.
Another good way to eat these veggies, even when you don't love them, is to saute them in butter or lard, salt, pepper and spice them up to taste; that will make them easier to eat.
Depending on DNA, gut flora and goals, NOT EVERYONE will be able to eat as many of these veggies as they want. But overall, these veggies, when eaten raw or very lightly cooked and eaten with a big portion of fatty meat, will keep most people in ketosis.
Caveat:
Some people's DNA, because of living/reproducing for millennia in Northern climes will not be able to eat too many veggies without the carb count slowing their weight loss, and perhaps even causing inflammation. If your ancestors spent the majority of their time on this planet above 45 degrees Latitude, then it is likely you won't be able to eat as much veg as you want without stalling...

3 of his 7 are all varieties of a single species, which is all of the cruciferous veggies (Arugula, Bok choy, Broccoli, Brussels sprouts, Cabbage, Cauliflower, & Collard greens) are a single species that is a biennial crop, meaning if you harvest the top (stems & leaves above the crown) before winter, then keep the roots from freezing by protecting them beneath a pile of dry insulating leaves, the roots can sprout new plants again in the spring, though they might look like one of the other varieties of cruciferous veggies than the one you planted. All of these cruciferous veggies can also be preserved without refrigerator space by putting them in a shallow layer of water in a dish on a windowsill (south facing in N. hemisphere is best) after you buy them from the store and trim a sliver of the dried stem off of the bottom of the head of the cruciferous plant you purchased. As long as you change the water every couple of days so it stays clean and make sure that the bottom of the crown doesn't dry out, and the leaves are not immersed in the water, the plant will soon grow new roots from the bottom of the crown, and the leaves will get even greener and healthier than when you bought the plant. Then you can break off only the leaves you are ready to eat at each meal, and the rest of the plant will keep growing on your windowsill, and will keep making new baby leaves at the center from the diet of sunlight it gets. I've harvested about a head and a half of leaves from a head of cabbage or bok choy stretched out over a month or two without refrigerating it, and ended up with a sturdy set of roots that I can then plant in a garden to get a second harvest from the plant. All from an ordinary head of cabbage bought at any store, though you have to peel away all the damaged leaves (and cook and eat them) before you try to grow the head hydroponically on your windowsill.

Dr Berry, you once mentioned that you had had GERD really bad. I was wondering if the fact that you seem to have to swallow a lot now like you're needing to clear your throat has anything to do with that.? Not trying to be rude at all here but it's pretty obvious that something is going on. I just wondered if that is a carryover from the condition you had once. But it's something I have noticed in most of your videos, that you seem to have to swallow a lot, almost like something is in your throat?

Absolutely great taste with any meat, when affordable fried bacon was added along with the bacon grease. We only cooked with lard or bacon grease. Absolutely no sugar, however we did eat bean soup and fried potatoes & cornbread. Southern style. Just a side note... we did not snack in between meals, never! We never felt hungry.

@elizabethwhite1068

There is no such thing as "high cholesterol fats". We have been lied to for decades about so much. Cholesterol is not the enemy, neither is saturated fat. We die without cholesterol, it is in every cell especially the brain. I highly recommend you look into the Cholesterol Myth, you will find out that ALL of the crap we've been told is based on zero good science. I really like the books by Dr. Malcolm Kendrick, Statin Nation is a great place to start. The epidemics of obesity, heart disease and type 2 diabetes are all connected, and carbs and sugar are the cause. The history of how cholesterol and saturated fats became demonized while massive amounts of carbs became the official recommended diet for western countries is insane.
@widehotep9257
@widehotep9257 2 года назад
We've all been duped for decades. I remember hearing nutritionists saying you should never fast or let yourself get hungry, because doing so makes your body "hold on" to fat so you can't lose weight. What a bunch of nonsense!
@elizabethwhite1068
@elizabethwhite1068 2 года назад
@@widehotep9257 Yep, I remember that as well. We also used to know that too many carbs made us fat. Semi-starvation diets destroy your metabolism so that your body needs less to function, making it so easy to regain the weight and then some, becoming a vicious cycle. Hello obesity epidemic. If you look at the history of the whole "cholesterol" will kill us, you find that Ancel Keys, the scientist who came up with this garbage, even said himself in the early '50's that dietary cholesterol does nothing to raise blood cholesterol. Yet by the late '80's and '90's the public had been put in a panic over eggs, and was throwing away the most nutritious thing we could eat. How the hell did that happen? Then the AHA finally removes their awful advice on eggs, but does it so quietly people are still throwing away yolks. Low salt is a lie, "5 a day" is nothing but a marketing slogan based on zero science, so-called "vegetable" oils are toxic to humans, and 3500 calories equals a pound is a lie. The damage done is a crime against humanity.

Hi Dr. Berry -- Don't forget that avocados or guacamole can also be frozen to save money. Just buy a bunch when they're cheaper, cut in half, take the pit out and the peel off. What I do is then rub a little lemon juice on the halves to keep them from browning, then vacuu-pack them before sticking them in the freezer. It helps me have affordable avocado year round. If you don't have a vacuu-pack machine just use a freezer bag and get as much air out as you can before freezing. Bargain tubs of premade guacamole (check the label to make sure it's all real avocados, no gums or fillers) can also just be frozen.

Yep! Agree use tons of avocados in our kitchen, tons of greens also. Why did Dr. Berry leave out greens? He mentions kale but not spinach, arugula, Swiss chard, raw beets and beet greens, lettuces, parsley, mint, (many other herbs/greens), chilies and tomato free, , sweetener free hot sauces? OK he’s only referring to,fresh organic veggies here. Bacon fat is great but olive oil, avocado oil, ghee, are super for Keto weight loss, maintenance healthy diets. Also Siete brand grain free (cassava) chips & tortillas at Whole Foods.

One thing I love to make to take the place of salad dressing is Greek tziki sauce by chopping up garlic and cucumber and mix it in with whole, plain, Greek yogurt. Sometimes I also make my own mayo with eggs and olive oil then add the garlic and cucumber to that also and it's an excellent replacement for processed salad dressing. They're good on both veggies and meats.

Cabbage makes an excellent hamburger wrap. Just rinse the leaves a bit to get any sand off of them, shake the extra water off (not all of it), and stick them in the toaster oven for a couple of minutes to soften them up just enough that they won't crack. A lot of people do lettuce wraps, but cabbage is sturdier and tastier, IMO. It's also excellent boiled: cook some garlic and onion in bacon grease (or your fat of choice. Heck, cut up some bacon and throw it in there), deglaze with a bit of apple cider vinegar, put in your cabbage and seasoning (I like salt, pepper, and ground cumin), fill with enough water to reach most of the way up the cabbage (cooking for myself, this is usually a cup), cover and cook for about 12 minutes. Pour that in your bowl and top it with cheese. Drink the pot liqueur! And if you decide to grow cucumbers, get a pot big enough to can in and make some pickles! I make a brine with a good portion of ACV and pack the pickles with dill and a couple garlic cloves. Great to put on those burgers wrapped in cabbage.

Following Dr. Gundry diet so no cucumbers but everything else on this list is big on our diet (yes, I’ve already retrained the palettes of family members). Paleo is not a problem. Obtain grass-fed beef, range free chicken, and wild caught seafood without Issue. My gut microbiome appears to have re-established itself with help of diet and proper supplements carefully researched.

Dr. Berry, Thank you for your videos. I'm a Type 2 diabetic who was a carb glutton. Breads, bananas, pastas got my A1c raised to horrific level. Changed diet by ditching pasta and non-keto bread. Hated cucumbers but tried a new Greek salad recipe, now I love them. Hated Brussels sprouts bit tried them with bacon fat & garlic, love them. Using ACV daily also, Dropped 17lbs and A1C down nearly full point. Though I have more lbs to lose and A1C to contain, I know that I'll be able to get it off & keep it off! God bless.

Dean Ticks - Your weight and diabetes are controlled by BOTH "fasting and feasting". You should look to INTERMITTANT FASTING diet (see 16:8 - fast 16hrs feast 8hrs). Basically you both eat per day (once or twice) and push your body to fast also per day (typically by counting 16hrs from previous nites meal). Trust me it works like a charm - you will not feel hungry (after 1st three days) but by 4th day your body adjusts and suddenly you have a no hunger which (no distraction at all). Two advantages - weightless and reduction of insulin production (HB1AC) - your body literally resets and diabetes WILL reverse (not need managing) after weight loss. It worked for me and has for many - see vids by Jason Fung as introduction.

For me the biggest surprise was when I started using either butter or bacon grease and sauteed "coleslaw". I hardly ever ate coleslaw (mostly green cabbage with a very small amount of shredded carrot) because it was too rough to eat but sauteeing ...... gosh, what a change. It suddenly became very sweet and easy to eat. I usually add a small amount of chicken or beef and it is delicious! I have it for lunch 3-4 times per week.

I see many videos that talk of both ketosis and intermittent fasting and I’ve found that my journey of the lifestyle so far has me intermittently fasting as if it’s a natural thing. My palate actually seems better now and everything tastes stronger and I enjoy my food more . I eat maybe 1/4 of what I used to and like the change. I was 260 pounds and in the past month or so, I’ve lost 15 lbs. I replaced all potatoes,wheat, pasta with more avocados, celery, and cabbage. Instead of a bag of chips always next to me, I have some southern bbq flavored pork rinds as far away from me as possible. I eat more macadamia nuts for a snack than anything else. The change has been very welcome for me. Great video. ✌️

deborah gonzalez knight Whoever told you that is absolutely wrong. Keto is a high fat, moderate protein, low net carbs. Net carb being the most important aspect. That means you subtract the fiber content from the total carbs to find the net carbs. It’s easy to find these numbers on line but if you stay away from starchy sugary vegetables and nightshades you will be fine. Vegetables provide us with essential nutrients and minerals. You should avoid root vegetables like , potatoes and carrots because they have a high starch and sugar content but you should eat plenty of leafy greens and cooked cruciferous vegetables.

The caveat you wrote in the description is really interesting, and i'm finding for me personally there's a lot of truth to the ancestral/dna thing with relation to what we should eat. But that's a very tricky situation when you're a very mixed race person, like me - Celtic Caucasian with African/South Asian/South American/Oceania. I have tried and failed with carnivore twice, it simply doesn't make me feel good after a while, makes me feel very 'heavy' and I really started to crave low carb plants and nuts. When I go back to upping the low carb veg I feel so much better and my body seems to respond better. I don't seem to have any issue with low carb veg or nuts. Thus I find I have to lighten the load with meat and have more of a plant centric keto diet. It's trial and error big time for highly mixed races. So, for anyone who may be in a similar boat, this is something to consider. And thank you for providing this info Dr Berry!

Omg yes me too! I'm Polynesian/Japanese/Roma ("Gypsy") and so I've always needed more salt than the average American, because both my Polynesian and Japanese ancestors had lots of salty seafood in their diets. But there's such a push for low-salt foods here, I never knew that until I began to experiment with how food makes me FEEL. Whereas a friend of mine, whose ancestors lived far from the sea, thrives on a much lower-salt diet than I do. I think there's never going to be one way of eating that's right for everyone, because we each have different inherited physiology. . .

Actually I've been water fast I g most days, and now I have a decent list of me to veggies to integrate on a daily basis. I'm very grateful to you for this information!

Great video. I enjoy all your information you give us. I was the same with olives. Once I got all the sugar out of my diet and eating healthy olives tasted great. I found good olives with pits or seed have a better test. Just sharing what I found. Thanks Matt.

God I love cabbage. It even tastes sweet to me. One of my favorite keto meals is to steam smoked sausage and a ton of cabbage in a sugar-free chicken or beef broth. And now I know exactly what I'm having for lunch. I can't wait!!

I love Brussels Sprouts and bacon! Asparagus is great wrapped in bacon and cooked in a skillet until it all gets cooked well! Not a big celery person-only in recipes.

I love veggies! Grew up in the country and always had our own garden and let me just say if you've never had a home grown tomato then you've never had a tomato...they are amazingly delicious. When I was a little girl we had a tomato field right next to our house... I use to sneak the salt shaker and go out in the field and eat them right off the vine!!! I'm on keto and had roast with cabbage today...delicious!!!

@@muchasalud2011 I am sorry but you are incorrect. I "Googled" where it originated from and the articles stated that "Cole" crops like cabbage, kale, Brussels Sprouts, Kohlrabi, Savoy cabbage, collard greens and more originated in Western Europe and were domesticated about 2000 years ago. These are all part of the "Cole" plants and were uncultivated originally. So, not created in a lab at all.
