@@76_SPZL I love showing these videos to people who don't cook, because even he mentions how much substitution is acceptable. These are the kind of videos that could convince somebody who doesn't cook to fire up a saute pan and start throwing stuff in just to see how it comes out, then be surprised at how good it is and start doing more and more
I totally agree. You got cooks on RU-vid screaming "you can't use bacon in your carbonara, maybe it tastes nice but its not carbonara, come on!!!" and I absolutely hate it. They proclaim themselves protectors of real Italian food but its nonsense! Gennaro is the perfect ambassador of Italian food and the perfect ambassador to encourage everyone to cook good, healthy food with not much effort.
Gennaro makes me want to be a better person. This recipe is so from the heart, and its him just wanting to give people safety and confidence to make something at home with whatever they can improvise, its so inspiring. Grazie Signore Contaldo.

Also I was ordering some medium -highish end pastas at my local fancy Italian restaurant, and they specialty of the house is similar to this dish minus the bacon but adding a few fresh herbs like basil and oregano,and thyme leaves prior to COVID19 the price. It normally costs $22.00 eating in (with table service obviously) ,but since lock down restrictions only allowing take-out at restaurants, it was only $10, but my point being that it is pretty famous dish and is so simple, but because of its rustic image that this genuine Italian pasta dish conveys they are able to charge relatively big $$ for a dish with relatively few/simple ingredients, same for if you were to have a cooking class with this gentleman like you said.

It's quite something to be able to identify "just" what someone should be appreciated for - an amazing talent so sadly lacking with the inferior who cannot help themselves and bring unworthy values to their comments. Thank you for outlining the two items for which appreciation should be made, and serving those who come after you with a template for what they should be writing. Now, would you be able to help me with any of the issues you say I have ? But not if there is something wrong with you please.

I just love Gennaro! He is cooking just the way I learned to cook from my father. For half a year i was working in a Restaurant, but I think it will not make it much longer, since they have asked ppl to donate money. So to make to ling story short, i wanna start something new, a more natural way of cooking and connecting, that works in these times.

Genaro just does not run out of metaphors. It is important as it especially keeps us going during times like this. I miss him shouting, "Why do I cook so good?" :( Also, how steady the hands of Chloe!! With just one camera hands down I think she got the award for best filming amongst all. Keep the vids coming!! All these chefs cooking from home shows how human they are (especially with Genaro tasting that cooked pasta with his hands--just like you and me!!). I saw this at about 11:30PM this evening and had the great idea to start cooking RIGHT THEN because this looked just so dang good (as does everything you make, Gennaro!) Red & yellow peppers, white onion, sandwich ham instead of bacon, and spring onions instead of parsley on campanelle pasta. Salt, pepper, good extra virgin olive oil, & Parmesan. Unreal delicious, and done in less than 20 minutes with stuff I had already in the kitchen. People think that making pasta dishes is so complicated, but it really doesn't have to be. Thank you for everything you do, Gennaro! We love you!!

Just tried this. Didn't have a red onion or fresh chilli, so threw in a shallot and some dried chilli flakes. Turned out fantastic! So quick and easy to make. Thanks Gennaro for a great recipe. Will definitely making this again! Top man.
