This Steamed Pumpkin Kuih is very rich and flavourful. Besides the significant amount of pumpkin, fried dried shrimp and mushroom are also added, the liquid added is also from water that is used to soak these ingredients.

where should I get the wheat starch (what brand), can I substitute it with all-purpose flour?

You may try to find from supermarket/hypermarket, look for "kanji gandum", Bestari Brand. I used to see it in Tesco. If you really can't find it, you may try replacing with tapioca starch, but the texture might be a bit different, might be a little bit chewy if tapioca starch is used.

may I know what is wheat starch, is it the same as flour?

They are different, wheat starch (kanji gandum), wheat flour (tepung gandum). Wheat starch is normally used in making Chinese dim sum. Wheat starch is from wheat flour minus the gluten in it. Gluten separated from wheat flour is used in making vegetarian meat ..etc.

Is rice flour same as glutinous flour?

Rice flour (tepung beras) and glutinous rice flour (tepung beras pulut) are different.

Iv tried this but it’s abit too hard and starchy, may I know what went wrong? Need to add more water or reduce rice flour?

May be your pumpkin has less liquid, you may add in more water to make it softer. It shouldn't be starchy, is it completely cooked through?

I have followed ur instructions completely and it turned out to be very hard too. My pumpkin produced lots of water, hence when it reached the stage to add the mushrooms water, I didn't pour it all as mine already very watery as compared to yours in the video, so not sure what went wrong. Btw, what wl happen if I reduced the wheat starch? Wl it softer the texture a bit? Thanks for ur advice in advance!

Wheat starch is to give firmer texture, the texture of rice flour is soft sticky. I haven't tried changing the combination, you may try reducing wheat starch by 10 g and add rice flour by 10 g, see how is the texture. You may add more liquid if you prefer it to be softer.

Recipe a bit confusing. Two portion of dried prawns n dried mushrooms, one soaked n on one soaked n fried??? Video does not show as recipe given in link. Fried onions not added, presumed for toppings with chilli n spring onions but not added???

"dried shrimp soaking water" is the water use to soak the dried shrimp, not soaking dried shrimp in water, the same goes to mushroom. There is only 50 g dried shrimp and 20 g dried mushroom. Soak dried shrimp with some water, soak mushroom with water. Keep the water from soaking these ingredients, add these water to the batter as shown in the video.
